One Piece is 650 episodes right now, thats quiet the commitment, HxH is also at 135. Gintama is over 250. Not sure he really want's to make it his life's work to catch up on those.

Hajime no Ippo is all you need...perfect mix of boxing and comedy .

I came here to post this. And the best part is once you get whet your whistle, there is a 76ish episode original run, 2 movies, and 2 seasons of the the newer episodes. Lots of content incase you hate it when you have nothing else to watch since they finished an anime or are working on the next season.

Yeah, One Piece is definitely a commitment, but these are shows you can watch like 3-6 of a night, if watching Anime is something you want to spend time doing after work. It took me a few years to get through that list, but I thoroughly loved all of them. I always thought I would dislike One Piece, but after sticking it through (with a filler guide), I fell in love.

You have to get through the first like... 50-60 episodes before it gets into the god territory ( a big time commitment, I'm aware), same with Gintama. This is because you have to get to know the characters well, before you truly enjoy their interactions together. Rewatching some of the earlier episodes with the knowledge of "how they are", makes them just as awesome as the later ones though. The other series are awesome from the start.

This is coming from someone who doesn't have cable and pretty much watches solely anime during my spare/dead time. He seems to enjoy shounen stuff, so the above is a good mix of the greatest sports/shonen/mild seinen, to get him going. Some other recommendations may be for veteran anime viewers, if that makes sense.

The first half of Tengen Toppa Gurren Lagann is amazing, and that's all you need to watch.

Naruto actually isn't nearly as bad as it's made out to be, but goddamn is that shit a chore to keep up with on a week to week basis.

Also, the second half of Gurren is the good half.
 
Moribito: Guardian of the Spirit is another underrated on you should see. It's on the slower side but it's beautiful and has a good story. A fantasy setting with a female warrior protecting a cursed young prince. Very good series and getting a BlubRay release later this summer.
 
Uh, I don't know. I kinda like Cowboy Bebop. Space Dandy is pretty alright.

While these two shows are not my cup of tea, I do recognize that they are at least worth a look:

Bakemonogatari - Kind of hard to explain, especially since I've only managed to get through the first season. The dialogue's pretty good, but it is just way too slow for me.
Shinsekai Yori - Very experimental anime that has a very interesting plot, although it is very slow paced.
Eureka Seven - Mecha anime about a boy who ventures with an outlaw group. Didn't care for the main protag, so I never got that far into it.

And here are some that I genuinely loved and think are most definitely worth a check:

Future Diary - Loved the whole horror aspect to the show, despite the oft times annoying protag.
Clannad and Clannad: After Story - Former starts off as a typical harem-esque show but it gets better as it goes along, and the latter just brings on the feels.
Golden Time - This, to me, sets a standard for what a typical RomCom anime should be. Very good for the most part.
Death Note - Just a fucking brilliant show.
Kara no Kyoukai film series - Great mystery series. It doesn't really explain itself in the first movie but everything is revealed as you go on and the animation is just gorgeous, particularly in the sixth movie.
Log Horizon - Similar to Sword Art Online and Accel World, but the world building is tons better than in those two.
Steins;Gate - Amazing time travel anime that's both funny and witty, while being very beautiful.
Ano-hana - A drama that is just beautiful and had me in tears by the end.
Code Geass - Similar to Death Note, but on a more epic scale. The ending was great.
Angel Beats - Great show about this group of misfits stuck in limbo, loved everything about it except for its short episode length.
 
Really loved how quick the pacing is in at least the first half of Death Note. I was like "damn, this character knows what he wants. No 5 episodes about morals and ethics, we dive right into it!"

Man, I wish I could watch both Death Note as well as Naruto again for the first time. Death Note is amazing, and Naruto is so fucking good. People will complain, but I don't care. It's one of the best(without filler).
 
Another extremely underrated anime is Beck Mongolian Chop Squad. It's an anime about music. It's a coming of age story. The story revolves a band becoming zero-to-hero. Less than 30 episodes, mature, an astounding OST, and it will make you cry when you know it doesn't have a second season.

Mature themes I would recommend works from Satoshi Kon.

if you enjoyed the fuckedup-ness and intensity of Attack of Titans, you'll enjoy this.
 
There's a lot of good stuff here and... some questionable choices. Regardless, I suggest taking it easy and sticking to shorter shows over long ones to avoid burnout, which can happen when you dive headfirst into anime like this. What you're going through is exactly what the US went through ten years ago and now we have an entire generation of bitter people who think anime is dead.

13-26 episodes is a good number to shoot for, with the odd 50 episode work.
 
I've only seen it posted a few times, but Steins;Gate is a much watch anime. I'll add in Bokurano as well
if you need a good cry.

I only started last week and I'm still in the auction arc, I'm enjoying it a lot more than I was during the test, but when does it really pick up? Am I in it and I just don't like it?

So the Yorknew arc ? I consider it and I think its widely regarded as the best in HxH. If you don't feel it picked up by the end of it I would drop it. The current one probably has better highs but slogging your way through another 60 episodes just to reach them probably won't be worth it.

I'll probably just watch up to current, I don't have much else to watch and I do like it, I'm just not seeing what makes it as amazing as everyone is saying. It's possible people have greatly overhyped it for me.

EDIT: Oh, another recommendation would be Vampire Hunter D.
There are two, one from 1985 and one from 2000. I mean the older one. The newer one is apparently pretty bad, at least compared to the first, though I've only ever seen the older one.
Tremendous amounts of Gothic Punk, a good story and pretty good animation for an old anime movie. I like it.

Bolded is a big no-no from me. Detective Conan's fun, but the plot's stretched out to hell and back, making it a huge time-waster to watch: it has 730 episodes right now, and the author has said the story has reached the halfway point (there're 17 movies, but none of them are canon). Also, the crimes become downright formulaic and boring after a while: Three possible culprits, one who has no alibi and a motive for doing it (hint: it's not him/her) and one of them who has a perfect alibi which gets demolished by Conan, and then breaks down in front of everyone and explains their motive in full after the Sleeping Kogoro routine is done.

Every side character besides a select few is at most a Wilson to Conan's House, triggering epiphanies through what they say (cue "Naruhodo, sou iu koto ka!/I see, so that's how it was!" and Sleeping Kogoro routine), and the show just keeps adding more and more characters while flanderizing the rest (ie: Inspector Megure goes from a slightly competent police inspector to only spouting "What?!" and "I see" 90% of the time).

If there's anything I've learned from fansubbing the show, it's that you'll have to watch it without even caring about the plot's glacial peace, and the crimes, while they might be fun at first, end up being repeated over and over, which is what slowly burned me out on the series... and don't even get me started on filler anime-only episodes (that Candy dog episode was a real pain for the whole fansubbing group). On top of that, the series used to have laughably bad animation at first, but I'd say it's somewhat decent now.

and so far nothing bloody happened but the hospital policts and presented society is depressing
) and the animation/music kind of creeped me out.

Will finish this, super interesting and mature stuff.
