It makes sense from a business standpoint. Demos can do just as much harm to a game's sales as they can do good. Being released within such close proximity (or in a lot of cases after the release itself) is probably done just to convince those who are on the fence. A significant portion of people are just going to wait it out if it's not that many days left.
