Flair/Steamboat is a good suggestion as well. I don't think War Games or TLC matches are good for someone who hasn't watched wrestling. WG are usually just bloody brawls with little story, and TLC matches are stunt shows. Something like Steamboat/Flair or especially Rude/Steamboat Iron Man match will teach someone how things work. How the heel/face interactions work. How selling works. How general psychology works. How timing works.
I feel like Steamboat/Rude is an excellent teaching kind of match. Someone completely alien to wrestling could watch that and understand how everything works. In a lot of ways I think Macho/Warrior at WM7 can also do that, but I feel like you need to understand the characters at least a little bit before seeing that match. You don't at all with Steamboat/Rude. Everything you need to know about those characters are explained within the match. Everything you need to know about what makes a heel a heel and what makes a face a face is explained in that match.
