There are a lot of other dudes that can be tough, sages, rolly polly dudes, bell ringing women that summon spiders, but none of them are as endlessly frustrating as these motherfuckers. IMO, of course.

Cathedral Ward -> Hunters Dream: ~10 seconds
Hunters Dream -> Cathedral Ward: ~30 seconds

Hmm, I might go for the Logarius Wheel from the chalices then.Err... actually, I'm pretty sure they do. I got the trophy from obtaining the Lost Wheel and Burial Blade, neither of which I had from normal story events at the time.
Pretty sure you just need any version of a given weapon for it to count.

To be honest, the stats on armor are mostly negligible, so you generally can just grab the set that looks the best to you and stick with it.
That said, the Bone Ash set you unlock in Chalice Dungeons has some of the best overall stats in the game, and specifically has good stats for dealing with one of the most obnoxious Chalice bosses, so if you're really looking to min-max to the limit that should probably be high on your list.
The Cainhurt set also has some pretty good stats, but if I remember right that one's sold for blood echoes, not Insight.
