Killer Instinct is a 2 years old game. I would say most people who wanted a Xbox One to play the game already bought it by now. Releasing Killer Instinct to PC might be more profitable for Microsoft, in the end.What with the hostility? I think KI was the only reason a lot of people were interested in the XB1 (Myself included). It doesn't have that many exclusives, and getting the one big exclusive onto PC means that plenty of people can easily get the only game they'd want on the console.

As someone who doesn't play fighting games, will I enjoy this?
May I ask why a Steam release is desirable? Can't you add any game into your Steam library?
I would image that MS would prefer to sell it exclusively through their Windows 10 store (so as to avoid giving Valve 30% of their profit and to bolster their own ecosystem), but there are those who swear they would avoid any game that doesn't go through Steam.
I just don't understand why people are so picky about this...
People like Steam's community; Steam's feature-set (trading cards, Steam workshop for mods, launching from Big Picture Mode); Steam's sales ecosystem and the price pressure to get good discounts; Steam's infrastructure for cross-platform support for other OSes; and just not having to run multiple clients on their system. They can also be reasonably sure that Steam is not going to be abandoned by Valve, leaving their purchases hanging.
Also worth noting: Developers can generate Steam keys 100% for free, so if MS did want to sell Steam keys on their own store, they could do so without giving Valve the 30%.

The problem here is that they have a store that's yet to establish its presence (which is quite likely why their pushing game like KI, Fable and Gears to Win10 now). As a result Steam would likely be the default location for purchases if they list it there, so they'd see that 30% cut coming off the majority of the sales, whilst limiting their own store's exposure.
I'd also think the whole Steam community thing makes it even less desirable, as the more reliant the PC playerbase is on Steam, the less likely they are to interact with the Xbox community that they would also be playing with.

I'm sure there will be a demo. You can try that and decide if you finally buy it.
Any game? No. I own a few games on the Windows Store like ilomilo, and I can't add that to Steam. That means I can't stream it to my TV, and I can't use any of the other features that comes with Steam. We'll have to see how they handle games like KI. I'm crossing my fingers that it'll be handled better.

Better than a demo, its technically F2P, and simply rotates the free character you can play every few weeks.
You can play that characters entire story, and fight against any other characters online.

I know that's how it is in the Xbox1 just not know the details in the PC version and didn't want to overselling it
hope they don't change this in the PC version (the F2P aspect of it)
