The weapon and base customization, the helicopter speaker system, the ability to do missions as other recruits or analyze the skills of soldiers... the game has a lot of customization and sim elements that remind me of some of the appeal I find in games like XCOM, Suikoden, Tactics Ogre. Game is expanded over the other Metal Gears (well, building on Peace Walker) in terms of freedom, customization, and management in a way that on first impression seems almost exactly as how I would have if I was the director.
Looking forward to spending a lot of time in free roam and using all the different recruits, personalizing my army, base, gear, etc.
Another touch I like is the persistent blood... a lot of games do this but after playing Dragon Age INQ with its great persistent blood spatter and then Witcher 3 with none... and previously, GTA V with its rather weak bruising and blood and replaying Sleeping Dogs with its great blood and bruising system, it's really a strong feature for adding a sense of survival and battle to cutscenes.
