I don't remember Quelaag looking like that but I only played it on 360.... she always looked like a "clean" anime girl torso on a big spider. She looks more like a corpse in that shot which makes me think I may have missed (another) detail in Dark Souls. Is that near the end of the fight maybe?

I kinda edited almost all the textures in this scene. ;)
It's the standard hollow texture crammed on top of Qulaag's UVs.

While roaming around in the WW I era I started to notice that the game looked somewhat better than in normal mode, reflective surfaces seem to use SSR instead of the basic cubemap reflections the normal gameplay mode has, check it out.

Those are really pretty damn good, but I feel like the character models in Unity were a bit more impressive.

True, tbh I feel like Syndicate is missing a bit of cool stuff that I really liked in Unity. The biggest thing being character customization which has been downgraded A LOT. Interiors aren't nearly as many and frequent. Both facial animations and texture quality on main character models are also noticeably better in Unity.

The customization hit was hard to be honest, is the thing i miss the most, the facial animations tho. i find them kinda better on Syndicate, anyway i agree that Unity is better overall but the gap isnt as big as people think.
