Go knight. Best starting gear and good stats in str and dex, which would allow you to find a weapon / playstyle that suits you a bit easier than some of the other classes.

Don't know about the difficulty but the challenge should be there. I mean, I played Dark Souls first and breezed through most of Demon's Souls without dying too much. The early streamers seem to be really experienced in the Souls series.

It must be really difficult to make a game that isn't too punishing for newcomers but at the same time challenging for veterans. If this was my first Souls game I'd die constantly, I'm sure. It took me ~ 20 hours to get through undead burg back then.

I should note that in Souls game, what classes do is determine your starting stats and starting items and gear. You can build the character however you want as you level up.. It's true that one starting class may more efficiently build into a type of character than another, but other than that there's no long term effect.

yes. you have to make a JP psn account to get onto the JP PSN store and buy it. after that it seems you can play it from your PS4 regardless which psn account you're signed into.

the caveat is you need to pay in japanese yen, which means for most of us who are not in japan we must go onto a site like play asia and buy japanese PSN money (which stores like play asia will deliver digitally so it's pretty painless).
