I had a little time to play some Assetto Corsa last night so I figured I'd compare the sound in that to GT Sport. I used a Ferrari 458 GT2 car in AC and compared it to the direct feed replay from a Ferrari 458 GT3 in GT Sport. Both are running around the Nordschleife and even with my incredibly crappy driving, both times are within a few seconds of one another.
Assetto Corsa Ferrari 458 GT2 @ Nurburgring Nordschleife
Gran Turismo Sport: Ferrari 458 GT3 @ Nurburgring (Full Lap) (1080P Direct Feed)
My comparison may be a little spotty because AC isn't known for its sound as much as some other sims out there, but I feel it does some nuances pretty well. It does well with suspension noises and transmission whine while maybe being a bit lacking in engine note. GT Sport is an improvement from past GT games judging from this video. Sport still suffers from the problems I had with GT5/6 in that the tire screeching sounds overpower everything once they pop up and the shifting sounds unnatural. I feel that a little bit of variation in the sounds would go a long way in improving the perception of realism. A few pops and cracks in the exhaust note, some drivetrain oscillation ala Raceroom, and just general imperfections to make it sound like an engine that is bred for racing. I applaud PD for taking some initiative but they have a long way to go.
In retrospect I should've recorded the AC replay from the bumper cam but I was mainly going for the engine/exhaust notes.
