That should work. It's how I play some co-op (or vs games of Madden) with my son, the only difference being that I'm playing on a second Xbox One S upstairs while he is playing on another Xbox One in the basement. The basement Xbox is my Home Xbox so he can play everything there while I just need to be signed in on the S.So here's the plan:

I've set up my 6 year old lad with his own account on the Xbox, so he can play my purchased games and use my xbox live subscription.
Now, will this allow me to play multiplayer co-op with my son, with me playing on PC and him on the Xbox (logged into his account) ? (Both my PC and Xbox are connected to the same router/broadband line)

I wouldn't be so sure, considering it works exactly like this today with a single (digital) purchase with two Xbox One consoles. As long as the other (not the "owner") profile is signed in and playing on the Home Xbox then the other profile should be able to play on another device at the same time using the account license.Not possible with a single purchase.
