you're right - i should put it this way
will i encounter it during my main quests?
Sort of - it's in the general area of a main objective, but it's not specifically pointed out or on the critical path to get there.
It's quite easy to miss it, I think, although not far from a place you'll have to go. It's also really, really late.
I'm at about 400, and still finding them... So well, maybe not 800, but once you down to 40-50, it must be insanely difficult to locate them in a 360km² map.
The ones in trees/poles are annoying, I don't want to climb everything just because :/ It should be visible from the ground.
Its hidden in one of the main objective areas, and its definitely posible to miss it.
Now, for something you actually wont find on your main quest:
The master sword.

I'm around 380. It's interesting where this game expects you to try to find korok seeds. They're not exactly out of the way, just that you have to change your mind set. Actively looking for Korok seeds and then finding things along the way like new weapons or Lynels to fight instead of the opposite is giving me a dozen more hours of gameplay.
Well, while I agree, it's such an obvious place to visit that I can't see myself not going there. The

Well, for me the game is largely Korok collect-a-thon. Probably 95% of my play time. I'm kinda fine with it, actually, but I can't imagine a reliable method.

So I ended up getting to 119/120 Shrines, saving
for Last.
I...fully admit I had to check some online guides to see where they were. I had found nearly 90 of them just from exploring but then I figured what the hell, might as well "finish" the game after beating Ganon already.
I was shocked that a lot of them were in areas I had been before or tied to stuff I didn't really want to do at the time (like the Sand Seal racing) or stuff that I had figured were probably quests and didn't get them activated if they required me to come back later after a Beast (there's one or two like this in Gerudo)
What was quite nice was that for a majority of them, they were just Blessings so I could walk in and be done. Two were problems; one an Apparatus one where I actually had to take off my joycons and figure out how to rotate stuff and the other was some insane long one with different levels.
The rest of this is about Eventide and I'm gonna spoiler it so feel free to not click on it.
From exploring and figuring out some of the little tricks, I ended up with around 70 some Korok seeds. I...don't think I'm going to pursue those at all. I'm done with Shrines, I've beaten Ganon earlier and I think going forward I'll be upgrading my equipment that's left and that's it.
I don't think any NPCs outright tell you about it, just that they indicate there's a lot of interesting stuff inside the castle you should check out. I think if you didn't realize it was even in the game it'd be a nice surprise if you go and battle everything you can in the castle.

So, I had heard bits and pieces about Eventide before, accidentally spoiling some of it but a majority of it I didn't know much about. I had found it earlier in the game by ice walking across the water from the shrine that's out there. At the time I was worn out from the shrine (which was a Major Test of Strength) and didn't feel like doing it so I had to go and load a previous save.
I had thought about cheesing it a bit where you can throw some supplies on the island before landing, so I had a Guardian Spear that was damaged and figured I'd throw it up there so I had something besides a tree branch. After starting I found the first camp on the beach, use the spear and it instantly broke. One of the idiot Bokoblins ended up catching their weapon on fire, and there was a TNT barrel nearby which they caught on fire and blew up everything, including the fish I was about to steal. I got some roasted fruit out of it, and a few weapons including a rusty sword and shield. Then...disaster. It started to thunder so I had to unequip stuff. I climbed up the small hill and...Hinox. I cheesed that one a bit with Urbosa's Fury and had some trouble dealing the damage at the end because I couldn't light his leg armor up because of rain. Eventually he tried to sit on me and i stabbed his hand and got him. I had that orb but couldn't figure out where to take it, then I stumbled across another camp, this time one with stairs and another orb. Thinking I had gone too far, I went back and was like "oh yeah, there's a thing on the beach, I wonder if it goes there. That was a whole fucking thing since the orb didn't make it, and was in the water, and I couldn't use the ice pillars to get it since it was too close to the rock. Eventually I had it in a spot to get it onto the rock platform but it was such a pain in the ass.
Went back to the second camp and fought my way up. I had a bow from one of the Bokoblin there, but no arrows so...I couldn't shoot the last one on the little lookout stand...so I jumped down, and chopped it down with my sword. Got him and the ball, and carried it up a small hill, till I found another camp and another platform. I guess this one was maybe where I was supposed to go before Hinox because there were some TNT things and boulders but fuck it whatever. Fought them and grabbed a boko spear,, turned around and was startled thinking there was a Chu sneaking up on me and stabbed it...only to realize it was the orb I had carried up. It rocketed off the side of the cliff and into the water. No problem I said, I bet it will despawn and go back to the camp like one of the other Shrine Quests did. Cooked some food and.....nope. I had to fucking use ice pillars and walk the goddamn thing all the way back to the beach and all the way back up the hill. An extra like 15 minutes for bullshit. The last camp I had recharged my Urbosa's Fury and made quick work of it. Plopped the orb in and climbed up and got 120/120 shrines and made off to get my reward

My last two shrines took forever. I had to use a guide in the end and they were located in areas with tons of other shrines nearby. I just never bothered to check back since I figured I got everything there. Whoops!

Got some more thoughts here, probably been said many times already but when I'm not playing this I have a strong urge to discuss it.
Firstly, I love how you get "stronger" not by levelling up but by discovering how to play better. Loot obviously plays a role to a degree but not a large one, at least it doesn't seem like it to me.
For instance, guardians. First encounter I had with one it killed me in one hit. They still kill me in one hit now too as I've still only got three hearts, however now I know I can parry their laser beam, or shoot them in the eye with an arrow and wail on them with a sword, etc. I'm no stronger than I was at the start, yet have much less trouble with them now.
Secondly, I really like how they've taken notes from other open world games and put their own spin on them. Korok seeds are the best collectible I've ever seen in an open world game. They upgrade your inventory, so there's an incentive to find them, there's nearly a thousand of them so you will definitely find a lot of them, and most importantly they require exploration and curiosity to find.
It reminds me of what CDPR did with the points of interest/monster dens in Blood and Wine, by weaving them into side quests they incentivised the player to complete them. Different aspect but same principle behind it.
Though I'm not a fan of towers in open world games, I don't hate the ones in BotW. They're not great, there's definitely ways they could've been more creative with climbing them.
However the one saving grace they have for me is that kinda make sense. Link's slots his iPad into the control panel and downloads the areas map data on to it. I wish there was more of a puzzle to climbing them but eh, can't have everything.

And just like that, I learn another way of dealing with them. I was going with parries for stationary ones and doing my best to avoid the bigger ones, whiffed far too many parties against them for some reason and that's instant death for me.
Yes, I agree that a few have been a little too obscure. I do like the surprise of ascending a tree or pole and having a korok appear, but a few are placed in locations that are totally inconspicuous. Then again, since there is an over abundance of koroks in general, it doesn't hurt the game too much.

I've unlocked all the memories, still don't want to go fight Ganon.
I love the small details like every weapon having a different sheat, the way the plates of the Ancient armor are "realistically" tied instead of just glued to you, how that tent in front of the Gerudo town is tied to a rock in each leg or how the shield rack in your house have pins properly placed to put the handle of the shield.

pissed me off because not only was it at night, but also in a house with a closed door. Too hidden IMO. Hopefully no more of those?
Completed Ganon already - was a bit disappointing as a boss, but good to get closure on the story.

Haven't used any guides and I'm at 103 shrines and about 200 Korok seeds.
Really amazing game - it's not often these days that a game consumes me as much as this one has. There really isn't anything that I don't like, other than climbing when it's raining can get frustrating and it always seems to rain just when I don't want it to.
I'm missing 6 or 7 shrine quests so I guess I need to speak to more NPCs?

On an unrelated note, it's fascinating to me how different players approach this game. I am at 200 hours and only have 147 Korok seeds, and I regularly see people who have played far less with way more seeds. This makes sense to me since Korok seeds are asides for me... I don't really care about finding them, but when I notice a tell-tale sign that one is around I will grab it. I feel like others are carefully exploring every nook and cranny of the area knowing that Korok seeds might be there.
Honestly, 900 seeds sounds like work to me, and I am 100% fine with not finding all of them. I've had fun with the ones I have encountered, though.

I'm pretty much done with this game now. What a great ride.
What's fun is that my wife who has trouble navigating 3D games in general has just started her own save and gets excited by discoveries that I haven't cared for in a long time. Things like catching lizards or upgrading to a traveler's sword. Working out how to brave the cold on the way to the shrine in the snowy region of the Plateau.
And I'm not telling her anything, so she can keep that sense of discovery. Watching her freak out as the Stone Talis erupted from the ground on the Plateau was fun. I'm excited to see her leave the Plateau.
That said, I do worry this game is going to kick her ass. She still has trouble controlling the camera at the same time as running.

Been there, done that. It's a cool distraction but not the same as a horse.
Also just realized horses automatically navigate as long as you are on a path. I must have played close to 100 hours now and never knew this.

Are these special horses? The white one is 4/3/5, and that's the best I've seen. Normal wild horses might be faster but they are limited in some other way. I've caught a couple dozen and nearly all of them are exactly the same (1/5/3 I think)... these are solid color horses, usually with different colored manes.
Hm, I don't know if I've caught any horses in hebra. Are superior horses marked in some way or is it luck of the draw?
I'm praying that permanent Stalhorses will be part of a sidequest in the story DLC or something. It can't be that large of an addition, and they must know people want them.

250 hours in, latest discovery: different shields have different surfing properties. I'd been using shit shields to surf to conserve durability, but accidentally forgot to change out this time. The Royal Guard's shield is absolutely night and day, incredible.
