Pumpkin pie, and it's got to have whipped cream with it.

Unlike Sweet Potato and Pecan pies, I can convince myself it's not quite a dessert and, like OP, smash an entire one on my own without remorse.

I didn't know this was a thing. So there's other cornerstone dishes for Thanksgiving apart from cow-sized turkeys and pies?
Genuine question, we don't have this holiday here.

Stuffing/dressing is usually one of the staples. Cranberries/cranberry sauce, too. Some people think it's necessary to make green bean casserole, but I think those people should be hospitalized.

My family's staples:
Turkey
Ham
Stuffing (one with oysters, one without)
Noodles in chicken broth
Mashed potatoes
Deviled eggs
Broccoli & cheese salads (mayo-type dressing)
Stuffed mushrooms (w/cheese & bacon)
Green beans with bacon
Green bean casserole
Mac and cheese
Cheesy hashed potatoes
Bread rolls
Mexican-style chips & dip (usually as an appetizer as we're waiting for the main course)
So many different desserts/sweets: Cookies, brownies, pies, and more

My wife is one of these people. She gives me the side eye when I roll up with a plate full of turkey and mashed potatoes in one hand and a glass of scotch in the other. We host Thanksgiving for a family and people with no family in the area and my friend hosts Christmas. We have been doing this for over 20 years.

People who host others without family nearby are holiday heroes, even those who serve green bean casserole.

She must be a midwesterner. We love recipes where you use packaged foods as ingredients for other dishes lol. If a recipe calls for canned soup, ramen noodles, Oreos, Ritz Crackers, tater tots, graham crackers, rice crispies, etc as an ingredient then it probably came from the midwest.

Anyway to answer the question, pecan pie by far.

I can smell this post and it makes my heart smile.

Pecan pie sans nuts so it's basically just a delicious wedge of caramel goodness. I'm walking around like Tony Montana after one piece all day.

Yooo what time did you want me to come by?

I'm not on dessert duty this year so only bringing the breads:

Sour Dough Starter is ready to make a loaf on Wednesday.
Sour Creme dinner roll dough is rising in the fridge.
Rolled out some butter milk biscuits and cut them this weekend (will see if I get a decent rise with some flaky layers)...will bake those off thursday morning.
Will take a quart of Apple Butter for the biscuits and im g2g!

Pumpkin pie, with a truly absurd amount of whipped cream.
