I'm a weirdo that really, really doesn't like trying out demos lol. For some reason, knowing that the experience is "incomplete and about to end" makes me lose interest. I trust you and others in this thread so I'll just assume the games are cool. Plus if I get it on a sale it's not that much of a biggie if I end up not liking the game.

Just bear in mind, the first two games are a lot more... kid friendly. The third game is a massive tone shift for the series in terms of both writing and art direction, including having your protagonist function as a fully-fledged character of their own instead of being mute. So if you end up not caring for the first or second game, you should still give the third one a shot via the demo so you can get a feel for it without spending money, and then you can just pick up where you left off in the demo to the full release.
Demo seemed decent but I wasn't sold on the combat mechanics, very confusing. It's on my wishlist though, probably on a sale eventually. Pokopia owns me right now anyways.
