I would like to provide a source of information (keeping this OP updated) for people wondering not about what the options are specifically, but on what games we can get a consensus on the best visual appearance depending on the BC enhancements PS Vita provides for PSP games.
The two visual enhancements PS Vita provides for PSP games (long touch/press and hold the front touch screen for a bit for the PSP backward compatibility settings menu to pop-up) are bi-linear filtering for the upscaling process (PS Vita has exactly 4x the resolution of PSP and this already helps with the upscaling process) and a color correction option to compensate the fact that PS Vita uses an OLED screen while those PSP games were designed for an LCD screen (and even then we have to account for the PSP 3000 screen with an extended color space).
As always, people have different tastes and different eyes, so I do not plan for this to offer the objectively better visual setup for PSP titles played on PS Vita, but to at least sort out the titles where those two visual enhancement worsen the game's graphics.
I'll start with the first PSP game I have purchased on PSN: Persona Portable (the other PSP games I got were GTA: Vice City Stories [heavily discounted] and Sega Mega Drive Collection, but I have yet to play them on PS Vita).
Bilinear filtering: ON - definitive image improvement there.
Color correction: ON - PS Vita's OLED screen is capable of very vivid colors, but in this game I feel like such colors are a bit beyond what they were intended to be and I do normally like SEGA style oversaturated colors.

Color Correction: OFF - Vice City on PS2 was home for very saturated and vivid colors and the color correction pass tones them down too much, especially the sky.

Color Correction: N/A - I honestly couldn't see too much of a difference nor could anyone that I showed it to.

Color Correction: OFF - This game benefits from the extra color saturation the OLED screen provides.

Bilinear filtering: ON - Makes the game look less pixelated and thus smoother.
Color Correction: OFF- The vivid colors of the OLED screen make the game's environments much more enjoyable.
