Did the parties pick those animals themselves? The donkey seems like a pretty unflattering animal.
My understanding is that the parties picked them for each other, and they embraced it. The donkey is supposed to be a "jack ass" and the elephant represents being "big/dumb/aloof"

Some countries (Egypt maybe?) vote purely on random symbols to represent a party ie a bike, a soccer ball, a car, etc since a lot of people can't read.
