Maple Pecan Bacon Cookies
Ingredients
1 ½ cups flour
½ teaspoon salt
½ teaspoon baking soda
½ cup bacon drippings
1 teaspoon maple extract
1 cup brown sugar
1 egg
¼ – ½ cup crumbled bacon – save the drippings from this for another use or add to your already existing drippings to make 1/2 cup (make sure you refrigerate until solid if you add it to the drippings you already have)
½ cup toasted chopped pecans
Preparation
Preheat oven to 350 degrees and line a baking sheet.
Mix together the flour, salt, and baking soda.
Cream together the bacon drippings and brown sugar.
Mix in egg and maple extract.
Mix in dry ingredients.
Mix in bacon and pecans.
Drop tablespoons of dough 1 inch apart pressing down to flatten out a bit.
Bake for 12 minutes then remove from oven, let cool on baking sheets a few minutes, and then transfer to a cooling rack.
Prepare to have your mind-blown by the flavor of bacon.

Do you have any baking stores near you? Maple extract is common here, but...you know. Canada. You may need to pick it up online :O
That's what I'll probably have to do. Normal grocery stores only carry vanilla, almond, orange, and lemon usually. There's a few gourmet and specialty shops around here but it'd be kind of a crap shoot. If I can find a good extract company online I'll stock up on all kinds of unusual flavors, like hazelnut and pistachio.
Speaking of which, has anyone tried this pistachio liqueur?
