Kaufman would have actually showed up to his scheduled performances. He would mess with the audience and he might not perform the routine that you wanted to see, but I don't believe he made a habit of standing people up.
He actually did a lot of cheap college shows.
The Death Grips form of social experiments involves them fucking over their fans and being too cowardly to do it to their face. Kaufman stood in the middle of the storms and hate he received. He reveled in it and it was almost always a part of his act. He tried to make himself the villain during his wrestling days.
From what I read on the Death Grips, they seem to just flake out or get better opportunities, so they just shit on their fans who pretend that getting shit on is some honor or some longer game. They are geniuses to the indoctrinated and assholes to everyone else. It may be the same with Kaufman, but I respect people that don't do stunts behind the protection of a PA announcer.
