The trick I've found for the orange chicken (those of you who aren't satisfied with it) is to use a high-heat oil (like peanut), and throw some garlic into the orange sauce while it's heating up. Then, once the chicken is done cooking, you pour out the remaining oil and put the sauce into the pan with the chicken and stir like mad. You'll lose a lot, but the flavor and texture can't be beat.
