I've been a fan of anime for quite a while, my older brother got me into it. But really I feel like I've watched almost everything good, I am hoping GAF can let me know I am wrong. What I've watched and enjoyed:

Bakemonogatari (and subsequent Monogataris) is pretty good. The romance element is terrible but the comedy is excellent. It's by the same author as Katanagatari.

And do watch FLCL, it's by the Evangelion crew but far more lighthearted in tone.

But what genre in particular do you enjoy?

I don't see Ping Pong on there so you've already failed the "watched all the good ones" test :p

I'd also recommend Shirobako and Death Parade from earlier this year.

Usagi Drop - Utterly charming and genuinely innocent, life affirming stuff.
Clannad - The second season is legendary imo.
Cromartie High School - The funniest anime I've ever seen.
Summer Wars - Very similar to wolf children, go in blind and enjoy.
Yu Yu Hakusho - Made by the same guy who created Hunter x Hunter, smashes Dragonball to smithereens.
School Days - A really interesting twist on the harem genre.

"Ping Pong: The Animation" is phenomenal; an absolute masterpiece.

I didn't realize the Director (Masaaki Yusa) was the same guy who made my other personal favourites: Kaiba, Kemonozume and Tatami Galaxy.

What an insanely talented man!

The Tatami Galaxy - A trippy Groundhog's Day-ish series about a college guy who is trying to work things out for himself. Fantastic art style and music, cast of characters are charming, some pretty hilarious parts. Lots of talking.

Space Battleship Yamato 2199 - Space opera with some nice production values. Give it a few eps. to get on its feet though.

My tastes lean towards serious and fan service will make me turn off the show pretty quick.I don't see Legend of Galactics Heroes. Drop everything and go watch it right now. All 100+ episodes. It restored my faith in anime after being out of it for 8ish years.

Other ones:
Last Exile: Watching this one right now and a huge fan of the steampunk setting.
Moribito: Best female lead in an anime, period.
To the Terra: Fantastic space opera that tackles some dangerous questions.
Yamato 2199: Another fantastic space opera.
Escaflowne: I remember it being really good.
Blue Gender: Another one I remember being really good.
Scryed: Yet another one I remember being really good.
Witch Hunter Robin: Yet another one I remember being really good.
GTO: I liked the humor when I was younger, dunno how it holds up these days.

This season got quite good number of interesting ones.

Ushio and Tora - If you like Jojo, this one is pretty hotblooded shonen from an outstanding manga.
Heroic Legend of Arslan - From the author of Galactic Heroes

Also Gate and Food Porn..uh... Food Wars

Fix this. See everything he ever made. Yes including Paranoia Agent.

Watch Utena - Ikuhara lied and said he was making a girls show. LIAR.

Watch Princess Tutu because all should.

Someone said Escaflowne, I agree.

Track down Macross Plus and Giant Robo, still two of the best OAV series ever made.

Man, I was trying to come up with something I was in just to be silly, but umm, Princess Jellyfish?

But seriously Satoshi Kon.

And Tutu.

Edit: And if you only ever watch one Gundam: 0080. Short and to the terrible point.

EDIT: I didn't see Desert Punk getting a mention yet, a post apocalyptic comedy series chronicling the exploits of a lovable mercenary, whats not to like.

It has unresolved plot threads but I'm not sure how much that shit really mattered in the end. I don't think there will be a S2.

It's hard to give recommendations without knowing your taste. Looking at the list, a few easy ones I can throw out

Mushishi: Brilliant slow and melancholy supernatural show. Love the episodic structure

Gin-Tama: Super long, but one of the most brilliant comedies going. Takes a season or two to reach its peak, but it's still fun from the get go

Gundam: Hard to pick where to start here. Maybe read The Origin and then go from there. At the very least watch The 8th MS Team and 0080. G is very fun as well.

All of Hosoda's films: Maybe start with Wolf Children, but they're all amazing. He's easily the best director working today.

Revolutionary Girl Utena: Amazing series filled with beautiful thematic imagery and subtext. One of the real masterworks of anime.

A few older-ish ones off the top of my head that are real good.

Giant Robo: The Day the Earth Stood Still - Rip roaring retro future filled with super powered humans, robots, mad scientists, secret organizations and an amazing soundtrack.
Gunbuster - Daddy of Evangellion
Diebuster - Indirect sequel to Gunbuster
Macross Plus - Stand alone OVA sequel to the original Macross. First team up of Shinichiro Watanabe and Yoko Kanno both of Cowboy Bebop fame.
G.T.O. - One of the required watch comedies in Anime.

Legend of the Galactic Heroes aint on that list, you haven't even seen the best anime yet.

Gankutsuou: The Count of Monte Cristo is another one you need to get on.

Samurai Flamenco is an interesting show I would recommend checking out. I haven't watched all of it yet but it's very intriguing to me.

The basic premise is that the main character acts on the idea that today's world is corrupt and he wants to fight injustice, which he accomplishes by dressing up like a superhero and going out at night to catch people committing petty crimes.

And from there it.... develops.
