Unfortunately, it doesn't seem like there's a version of JWPce or NJStar for Mac users. Anyone know of an alternative for Mac users?

Yeah, all you do is:

System Pref
International
Scoot Japanese up to the first or second language in the language tab
Turn on the Japanese Kana Pallete box
Turn on the Kotoeri box
Turn on the Hirigana box (in not turned on)
Turn on the 'Show Input Menu in Menu Bar' box

Now you can switch from language to language by pressing apple + space simultaneously.

Yeah, dude. In the System Preferences Panel, click on International. In the Input Menu tab, add Romaji, Hiragana, and Katakana. Then it's just as simple as typing in any text input program. apple+space to switch between your different input methods. Hold shift to type in Katakana. Be sure to grab JE Dict. It's a fairly competent dictionary with an awesome kanji dictionary with drag and drop radical look ups.

Edit: Right on, Jim.
