I was staying in a holiday cabin with 5 other colleagues during a business trip for one week; we all took turns to cook each night. On my night, everybody said that it was the best meal they had ever had, better than any restaurant they had ever been to and that they didn't know it was possible for food to be so tasty. They kept mentioning it for days afterwards.

If you care to know what I made

Baked some whole chicken fillet breasts at 150c degrees for around 25-30 minutes - until they're just beginning to darken. Took them out, chopped up one of the chicken breasts and some bacon into strips. Then, I covered the remaining whole chicken breasts in red pesto, placed some sundried tomatoes on them, then wrapped it in (british) bacon and applied a layer of extra mature vintage cheddar. Then, repeat again for a second layer/wrapping of red pesto, sundried tomatoes, bacon and mature cheddar.

Place the strips of chicken and bacon into large, wide oven dish, place the chicken and bacon parcels on to an oven rack and place the rack on top of the oven dish containing the strips - so that all the juices drip down on to them.

Cook in the oven at 160c for 45-50 minutes or until the cheese is starting to brown. Cook up some Fusilli Pasta in the meantime with a bit of pesto. When all are done, take out the oven dish with the strips and fish them out with a slotted utensil, them mix the strips into the pasta. Serve with the chicken and bacon parcels. It should be an incredibly juicy and tender marvel if done right.
