Gradius V: Boss explosions are pretty awesome. They're not realistic and are overly exaggerated, but man do they look good and feel mighty powerful.


Honorable mention to Super Metroid's explosion of the planet at the end of the game.
 
I don't like it much as far as shmups go but Ikaruga's boss explosions are awesome. Mercenaries also has some great looking explosions.

The Metal Slug games still have some of the best traditionally animated explosions ever.

It's not a great game, but From Russia With Love has some of the best gameplay explosions in recent memory. Extremely well done - check out some video if you've not seen them in motion (try the one called "Vehicle Madness").

I'm not a big fan of PDZ explosions - it don't like when I can see the individual "puffs" that make up the blast. It feels very "16-bit" to me.

First time I played through the game I thought it was FMV from an historical archive, but then when I found out it was real-time and watched it again it blew my mind. Greatest explosion ever, and even the ones in game are pretty nice.

Okay, you win. Can't believe I forgot about that. Nothing comes close to that. It's pretty insane that's was even realtime!! It didn't even look realtime, it looked like high contrast saturated footage, but than the game plays it without a hitch and you see the same high constrast lighting and wind effect Snake, freakin' incredible.
 
Good to see a vote for Killzone. The explosions are incredibly convincing, right down to the pitter-patter sound of falling debris.

Metal Gear Solid 3 also comes to mind, and the winnar is likely Resident Evil 4 (GC, anyway).
 
I was always impressed by the explosion in the Dreamcast game Blue Stinger. Also had pretty nice looking smoke effects as well.

Air strikes in Mercenaries are pretty impressive. Sometimes I'll just stand there in the middle of a fire fight to watch the buildings esplode and crumble to the ground.

AH Blue Stinger :) Bring back great memories, that has to be from the import version as the american version had changed all the cameras.
