Best Noise-Canceling Headphones?

You'd be better off with noise isolating like Etymotic or Shure.

Noise canceling does a number on the sound quality + are expensive.

Noise isolating if you don't mind something in your ear can offer the best sound quality I've personally ever heard.
 
Sennheiser HD-280's (sealed headphones). They're fairly cheap, the sound quality is great, and you don't have to cram anything in your ear canal.
 
I have the Sennheiser PXC 300's and am pretty happy with them. They have good (not unbelievable) sound quality and excellent active noise cancellation. They really are worth it for long plane rides.
 
sennheiser has some awesome new sealed headphones for like 15$ i wouldn't recommend canalphones simply because if you only want the sealed effect for plane use and you don't fly every other day, the 8x price multiplier doesn't make any sense. there aren't any decent active noise cancellers that i know of that are of equally reasonable price either.

+1 on these. I have a pair as recommended by GAF and while they aren't noise cancelling, I have no idea what anyone is saying or doing when I have them on. People frequently end up tapping me on the shoulder at the office after trying to yell and get my attention, and the volume on iTunes isn't even that high.

I strongly prefer sealed headphones to the attempt to cancel noise. I'mm also sold on Sennheisers. After some time to 'wear in' then have become the best headphones I've EVER owned.

I'm sure they're fine. Headphone.com gave a STELLAR review to the 201s, claiming they're pretty much the best bang for the buck you can find anywhere. I'm gonna pick some up soon, myself. I've had a pair of HD 580s for about, oh, 4 or 5 years now and I've loved them to death every second of that time. The only reason I'd part with them is if I could wrangle up some 600s or 650s ;)
