Since you've watched Ninja Scroll, the next logical anime for you would be Vampire Hunter D: Bloodlust. Very cool anime. It's not as good as Ninja Scroll, IMO, but it's one of the top animes.
Samurai X - Trust and Betrayal (4 episodes): This is absolutely is a must-see. Philosophy, awesome action, suspense, history, and a great story make it worthy of your attention. Anime set in the Bakumastu-era of Japanese history with characters based on real people.
Goldenboy (6 episodes): Let's just say that if you ever wanted pure comedy in an anime, this would be it. It's an anime made to relate to men and you can tell within the first 5 minutes. You will be ROLLING on the floor, I shit you not. Every guy I've ever showed this to has fallen in love with it and quotes from it reguarly.
Berserk (Series): Let me tell you now, this anime series is absolutely amazing. It's one of few animes where you really, really love the main character. He is the ultimate badass. Even more than Jubei Kibagami. The story is engrossing; The animation and art is defintely up there with Ninja Scroll; and it's a nice refreshing change of pace from a lot of other animes out there. Just to put it into perspective, I showed this anime to a co-worker of mine, and he watched the entire series over a weekend. Keep in mind that he only watched a few animes before. That's how good it is.
The Last Exile (Series): I just started watching this anime and am up to episode 14. This is a modern anime in every sense. Great story, characters, theme, and style.
Cowboy Bepop (Series): A classic series. Without a doubt its one of the more fun animes out there. Action, comedy, an interesting story, and a charismatic group of main characters. The movie is also worth checking out.
FLCL (Series): A wacky, but every entertaining, anime series. The style and artistry is really top-notch.
Rurouni Kenshin (Series): Samurai X is a OVA of RK -- A backstory. This is the full-fledged anime series. It's a lot more lighthearted, so expect a lot comedy and good-will. The seriousness of the anime starts to pick-up halfway through. It is then where it becomes very entertaining. I would recommend watching Samurai X: Reflection (OVA) after watching this series as you will see the ending of the world of Kenshin.
Blue Submarine No. 6 (Series): I never throught of this anime until later on in the series, where it became widly entertaining... It is one of the first animes to use CG, so you'll have to put your mind in 1998. It's made by the same guys who did the recent "The Last Exile". Anyway, this anime is a great one. Watch it.
Mezzo Forte (2 Episodes): A fun, action oriented assasin-themed anime. I watch this one reguarly because I love the style and the animation. There's also a nice bit of comedy as well.
Escaflowne: The Movie (Movie): Much, much darker than the anime series. Combine mecha with a mid-evil setting and some dragons and this is what you have. I love this movie and I enjoyed the anime series as well.
Outlaw Star (Series): I know some people may call this a Cowboy Bepop-rip off, but I would like to disagree. Outlaw Star is much more playful than CB and has a more mythological tone. Some people might not like the style, but I enjoy it. To sum up the series in a sentence it would be: A mythological, futuristic, spaceship-battling, bounty-hunting adventure that is really, really entertaining.
Memories (Movie): This DVD has 3 movies inside of it. Each have a different style and story. It contains one of my favorite animes, Stink Bomb, which is unbelievable and hilarious at the same time.
Neon Genesis Evangelion (Series): A futuristic mecha that starts off with great action and ends with great philosophy. The story, characters, animation, and style are some of the best in anime history. If you're an anime fan, you should watch this series. Watch the movie after you're done with the series, otherwise you'll be ruining the whole experience.
Record of Lodoss War (Series): This was a first, back in the day. A Japanese animation studio doing a Western, Mid-evil theme. It took me a few episodes but I warmed up to it nicely. The later half of the series is breath-taking and would be comparable to something like an anime LOTR.
Macross Zero (4 episodes): An amazing, AMAZING recent anime that has some of the best CG in an anime. I don't want to ruin anything, but it takes place before the Zentrati attack Earth in Robotech.
Macross Plus (4 epsidoes): You don't have to be familiar with the Robotech universe to enjoy this one, but it would help. Anyway, it's like Top Gun, where you have a cocky pilot who defies everyone.
