What's wrong with MvC1? It has the best final boss and some fun combos. I liked the 6 button layout over the 4 button + 2 assist. I'm one of those people who prefer Alpha 2. They all had to start somewhere. SF had some iffy ports. I'd say there's a lot more KOF's to forget. Samurai Showdown is fun for a while, but it isn't something I'd play often. Fighting up to Bison is a lot more enjoyable imo. SNK has a fun layout, but it was never something I could memorize.
The roster and gameplay is worse than Marvel Super Heroes vs. Street Fighter, X-Men vs Street Fighter, Marvel Super Heroes, and X-Men Children of the Atom that preceded it. Samurai Shodown sucks outside of 2 and 4 even if 3 is really pretty. I don't know if you played Super Turbo but versions outside Japan had the AI turned up to 11 (T. Hawk was especially bullshit). At least SNK fighters had difficulty options and valid counter picks.

Udon sprites are worse than originals and animate stop motion style. The balancing is worse than Super Turbo. I would rather play Turbo Revival on the GBA.

Gold war machine and war machine is what's wrong with MvC1. Most of the assists being trash didn't help nor did the iffy roster.
 
I was a SNK guy.

Just for MOTW alone there are above.
SNK games were more fun for me while Capcom were more grounded and technical.
SNK were more crazy in characters design. And overall experimented more in their game (The Last Blade 1/2 comes to my mind)

So SNK style has an edge.
 
hard question, KOF98 - 2000 is my fave, same with mark of the wolves and last chapter blade. but zero 3, SF5 and 6 are my fave as well. and both nailed in SvC years ago.
i think the best is 6, because You can do lot of things, not just fighting, and also for casual people who wants to try but afraid of learning curve of control scheme, now finally can play nicely.
 
ASW is the real answer, but of the two in the OP, I think Darkstalkers and MVC are two of the most fun fighting game franchises out there, so Capcom.

SNK did a lot of things right, but the characters and the moves were never bombastic enough for my tastes. I'm not a FGC person though, I just play for fun.
 
I'll always take a good KOF over a SF.

The only two Capcom Fighters on the same level are SFA 3 and SFIII 3rd Strike.

Not a big fan of the Marvel crossover games, either.

ASW's 2D sprites animate poorly. The balancing is all over the place. Spacing and footsies are afterthoughts relative to mix ups and combo spam.

I like the character designs more in KoF / Fatal Fury and Samurai Shodown than Street Fighter. I also really dislike many of the SF character designs and new characters introduced to the series after 3rd strike. 3D designs Street Fighter are freaking hideous, I still play it though.
