The fun part for me is when people speak about "Germany" or "Italy" when both of these countries are very recent concepts.
You can see it clearly in how many medium to large cities they have and how different each part is.

France and the UK have been centralized for a long time, France just went one step further and annihilated its own cultures.
At least the UK kept Scotland, Wales, Northern Island, etc.

Other areas are more about having local cultures while still being fine with belonging to a larger country. There aren't many people of Brittany that want to be independent, but most of them are proud to be Britton.

Occitania seems to have been gobbled up by the Frank conquest like other areas. That didn't prevent the development of local culture though, as we can see in the map of the OP, there was a large diversity of local cultures all around the country, even with a single king ruling on all of them.
Of course the history of the different areas are more complex than their global administration, all regions were influenced by the neighboring countries, migration flows, wars and invasions...

The french Basque Country and the Pyrénées Orientales (also known as North Catalonia) are literally remnants of the Basque Country and Catalonia that were once absorbed by France. Having their mirror on the Basque Country and Catalonia it's what maintains in those territories a sense of uniqueness separated from France.

Catalonia lost what it's known today as North Catalonia by the treaty of the Pyrenees, in which Spain ceded those territories to France in exchange of France's renunciation of the formal protection that it had given to the recently founded Catalan Republic.

Catalonia, once again, was betrayed by it's allies and paid the consequences.

Even my own tiny country (Netherlands) has an official 2nd language minority (Frisians) that's been there since the olden days. Also, when Dutch people from the "deep south" (Limburg) appear on TV, they sometimes subtitle them to improve intelligibility.
