Hamachi is my favorite for sashimi, toro and shirotataki are close seconds. Undecided for sushi since there's so many combinations. They're all good.

Mmm....yellowtail.
I knew this thread would make me hungry - probably shouldn't have started it since I don't have any food with me at the moment. Damn.

there's this really expensive, upscale place on a little island by San Diego called "Peohe's" that has the most incredible sushi... if your wallet can handle it!

my favorite there is the "surf & turf" - steak tartare over shrimp over rice. it's like $14 a plate but my mouth had an orgasm, so it was worth it!

anywhere else though, i'm inclined towards the philly roll (salmon & cream cheese) or anything with tempura-style-action.

Salmon sashimi a favorite for me, too.

One of the few things I don't like is umi. Bleargh.

Spicy tuna, unagi, shrimp tempura, crab... it's all good. Can't go wrong with Dyanamite and Caterpiller rolls either. I usually like trying out the specialty rolls that different sushi places have. There's one roll that's available only in December at a local sushi place by my house called the Christmas roll. Tthe thing is HUGE, and has about 4 or 5 different kinds of fish in it. Yum.

Spicy Tuna/Salmon Roll is where its at, and a Tempura roll.

One of the people in my Game Design class just came back from Japan and was treated there to a full course of "fugu" (the poisonous blowfish) and he said it was very good.

Anyone here make their own sushi? I've been doing it for a while and have been quite happy with it. Only do it usually with smoked salmon or crab though. But its nice to experiment making a hamburger (ground beef, shredded cheese and rice) or chicken roll ;)

so sashimi is just like chunks of the fish?

Does it taste the same as the sushi, or is it prepared differently?

sashimi is just the chunk of fish

nigiri is the chunk of fish (sashimi) over a clump of rice

Spider roll is made with soft-shell, yet crispy crab legs. The legs hang out on the ends so it looks spidery.

My fav too. Spicy salmon comes close. Tempura too.

I've always wanted to get one of those "Mr. Sushi" makers from the county fair, but everytime I'm about ready to make my purchase I have second thoughts. I don't want to make balls of rice that fall apart the minute I take them out of the little tray!

Your experiments sound dope though, Brodequin :)

I've tried to make my own sushi. I suppose its turned out ok, I've mainly used Salmon, shrimp and avocado, so its nothing fancy, but it works. Haven't done it in a while though, because the store close by wasn't selling fresh fish for some time.

Sushi Wabi in chicago is godly. Here are a few of my favorite Maki:

godzilla: tempura shrimp, orange tobikko, spicy mayo, avocado, cream cheese, green onion, chili sauce, sesame seed

ecuador: maguro, hamachi , cilantro , cuc , avocado , green onion , jalapeno , orange tobikko , tempura crumbs , chili sauce , wasabi mayo , sesame seed

The best part is that all of their rolls that use crab use real crab, not nasty crab sticks...

Also, a quick review (from citysearch) of Heat, another unique chicago Sushi place:
Sashimi is killed-to-serve: Choose from fresh and saltwater fish tanks on the base of the sushi bar. Pass over the chewy flounder and order the mild, light suzuki (bait sea bass). Executive chef and owner Kee Chan presents the flailing, freshly killed fish in plastic containers for approval; ours was still twitching when prepared and served raw and whole. Elaborate garnishes involve meticulously carved fruits and edible flowers. Perfectly tender, melt-in-your-mouth live shrimp make for a wonderful appetizer.

I had sushi for lunch yesterday.

Funny little exchange between myself and the sushi chef:

Me: "Man, this is good sauce what is it?"

Sushi Chef: "Oh...it's a special Japanese cheese sauce"

Me: "Really? what's in it?"

Sushi Chef: "Mayonaisse"

Uni isn't bad per-say, just has a gelatenous texture. It's quite bitter.

Caterpiller roll @ Sushi Wabi: hamachi . unagi . avocado . sprouts . eel sauce . red/black tobikko . sesame seed (The avocado is sliced thin and wrapped around the outside of the roll to make it look like a big green caterpiller)

Do you guys like dragon rolls? There is a place near me that has a ton of different dragon rolls. The place is called Starfish. Here is the list:

White dragon (S.W. over shr. Tempura)

Black dragon (Eel over spicy scallop)

Red dragon (Spicy tuna over soft-shell crab)

Dragon (Eel over shrimp tempura)

Golden Dragon ( Eel over lobster tempura)

(S.W. = Super White Tuna)
