Sushi Wabi in chicago is godly. Here are a few of my favorite Maki:
godzilla: tempura shrimp, orange tobikko, spicy mayo, avocado, cream cheese, green onion, chili sauce, sesame seed
ecuador: maguro, hamachi , cilantro , cuc , avocado , green onion , jalapeno , orange tobikko , tempura crumbs , chili sauce , wasabi mayo , sesame seed
The best part is that all of their rolls that use crab use real crab, not nasty crab sticks...
Also, a quick review (from citysearch) of Heat, another unique chicago Sushi place:
Sashimi is killed-to-serve: Choose from fresh and saltwater fish tanks on the base of the sushi bar. Pass over the chewy flounder and order the mild, light suzuki (bait sea bass). Executive chef and owner Kee Chan presents the flailing, freshly killed fish in plastic containers for approval; ours was still twitching when prepared and served raw and whole. Elaborate garnishes involve meticulously carved fruits and edible flowers. Perfectly tender, melt-in-your-mouth live shrimp make for a wonderful appetizer.
