Chu Chu Rocket single cart multiplayer works very well.

mario kart has (bare bones) single cart and some fleshed out multicart action. Other than that, I dont really know

This is, well, entirely unrestricted self promotion, but if you've got the money for two Racing Gears Advance carts and a link cable, the whole game was designed with co-op in mind (well, generally anyways. There's no game rule against hitting other players with a weapons volley...).

Mario Kart Super Circuit lasts for a loooong time (I play it regularly with a girlfriend of mine), another option is Zelda Four Swords (GBA version that comes with A Link to the Past) but that one gets boring after an hour imo.

The GBA version has some more features, but I'm not sure exactly what other than some kind of multiplayer and modes. It seems like it could be something fun to pass around with some friends to kill time. You kno, other than whatever you crazy kids are smoking these days.
