It works with most of them, although if you leave the cell radios on, you'll get interference with the GSM signal, so you'll have to put it in Airplane Mode as ckohler has mentioned. There are some new speaker systems in the works that are designed for the iPhone however that will help with this.
Has anyone tried out this yet:

It's the Monster iSoniTalk which is a headphone adapter with an inline mic and the ability to click to pick up calls/pause/skip tracks etc. I ran by the Apple Store today with the intent of getting a headphone adapter for my iPhone, and saw this for $20 and decided to grab it. Should make any headphones work with the iPhone and allow you to pick up calls. The price wasn't bad at all, and it feels like a quality product, but I haven't tried it just yet. Nice alternative though.
