Tonight we made Caldereta which is a Filipino stew.
We used beef, but also using goat or even lamb is common. It's also common to have peas and carrots, but we didn't use any of those either. Every family has their own ingredients, and many people try out slightly different combinations of veggies.
We cheated and didn't make our own sauce, and used a mix instead. The sauce is easy to make, though. It contains paprika, pepper, soy sauce, vinegar, garlic and tomato paste or ketchup.
Chop the veggies before you start. We used onion, bell pepper and asparagus.
The sauce mix:
Saute the beef and onions in some oil, and then set aside when done.
Then cook the rest of the onions and other veggies.
Add in the sauce, cover, and let the vegetables steam for a bit:
Mix the beef and onions back in, and serve over rice and spoon some sauce on top. Done!
