Could be he learned it by himself FROM practicing and obeservation, keep in mind who his mother is and who she trained with since youth That could explain why Josef could use the Ripple but not Jorge/George II.

Well his ripple was really weak, I imagine his natural breathing rhythm was close to ripple breathing, allowing him to use the ripple. Im not Araki though so who knows!

He didn't. He's just exceptionally talented from birth. The potential in him was strong enough that without training he would accidentally still be able to use his powers, even though he didn't understand the technical nature behind them. It's not really hard to believe, like how certain people are just inherently talented at certain things, and they become even better once that ability is identified and they're given proper training.
