Agreed. I hated the demo and only bought the game months later on sale after it got nearly universal praise. It's now one of my favorite games of this gen.

Simple answer is you're doing it wrong. In fact, if you're just waiting for Counter prompts you literally couldn't be doing it any wronger. As other people have said, try the Combat Challenges. When you get to the harder time limits and score targets you learn pretty quickly that the combat system is amazing in this game. It's one of the few I can think of that is designed so tightly that, once you master it, you can literally obliterate everything in the game without a scratch.
