I believe some of that stuff is in the game, you just have to craft it.
Yeah you can make more maps and then lay them out in picture frames on a wall, but they number them in order of where you go. So for instance, you have 3 empty maps. First one is "Map #0" which is the origin "quadrant" and so far has always been the center block:

7 8 9
So you always start in the "5". But if you go to the east of that, the next map will be "Map #1". Then if you return and go all the way back to the top left of the world and use the third blank map, it'll be "Map #2". There's no consecutive numbering system unless you manually do it, but since you're exploring a new world you really cant judge where you're at.
Is there anyway to mark things on a map? because that'd be amazing. I've written down coordinates before on a piece of paper but even that seems dumb.
Question. Is there a limit for how many animals you can have inside a pen? Similarly, is there a limit to how many working pens you can have? I'm starting to have quite a few sheep and cows and I thought I'd rather separate them onto two different pens, and eventually the same for pigs and other animals.
There shouldn't be a limit besides size spacing. Usually one animal can fit in one "block" space. Out in the overworld it'll just push them closer so they overlap each other, but sometimes they can glitch through things. I've made pens up against solid walls and sometimes the animals can get pushed into the wall, and they start taking damage from it and die.
When making an animal pen, just for my convenience, its easier to group them by species. You should give them some room (especially length wise) so you can enter and exit their pens easier (especially if you're bringing them in with a lead instead of food). Best thing is to put the gate and have a pressure plate on the outside of it, so it closes behind you. Animals have some sort of AI that if they see an opening they immediately go to it lmao. Make sure too that the area is protected; having pressure plates open with wolves nearby means they can attack the animals at will which has happened to me before.
The only thing you have to worry about for animals is grass for sheep. Sheep wont regrow their coats if you shave them unless they eat grass.

Is there no main goal or something, and where should I start?
Your main goal should go in some sort of order like this:
Get Shelter/grab food (killing animals, etc) > Create Bed > Create Tools/Camp/QoL stuff (ie, chests for items, crafting table, furnace, etc) > Obtain/start growing food > Capture animals to start a small farm > Begin mining [As you mine, your garden/animals will grow so you have a constant food source] > Obtain Mats and continue upgrading gear/tools/armor [At this point, you can wander around the world too and try to find overworld resources. If you have another player with you it gets much easier because you can split up and explore/mine/garden but otherwise as a single player this works best] > Eventually make portal to Nether >obtain mats for strongest weapons/enchantments, etc > eventually make End Portal or find it >
I've logged hundreds of hours and sometimes don't come anywhere close to getting to The End. And of course you can always come back, just make another world to explore or start over again if you feel sluggish at some point. At any point in there when you have time, you can also choose to "beautify" your camp. For instance, stair pieces look like chairs when you set them out, you could build yourself an actual nice house out of wood or cobblestone, make paintings, etc)
