Currently addicted to the ones at Sharky's Mexican Grill.

I do homemade nachos once a month, because all of my kids love them. We've tried all kinds of variations:
-Ground beef, chorizo, steak, chicken, carnitas, barbacoa
-over tortilla chips, or Doritos, or french fries
-with beans or with refried beans (gotta heat them first!)
-with shredded cheese or with queso
And then of course toppings for everyone to pick from- sour cream, guacamole, salsa, chili sauce, olives, jalapenos, lettuce, diced red onion, tomatoes, etc.
I think my favorite are slow-cooked carnitas over tortilla chips with shredded cheese all through it. Carnitas is so easy to make, too, and it's easier to shred in the mixer than it is to chop chicken breast or steak fine enough to make good nacho toppings. Or if I'm eating them out, I love Cafe Rio's chicken nachos. They are crazy good.
I'm not a big fan of nachos. I do love carne asada fries though.
