I am going to be frank, all you people talking about refried beans on nachos are blowing my mind. It makes no sense to me. I didn't even know it was a thing until now.

Tortilla chips, melt the cheese on them, then take them out and put your cooked meat on there.. Carnitas is good, seasoned ground beef, but if you happen to make BBQ and have some leftover pulled pork or chopped brisket that is the best.. Then add sour cream, chopped avocado, onions, salsa, hot sauce, and crumbled queso fresco on top. Don't forget the seasonings like some chilli powder sprinkled on top, salt, pepper, and some lime juice. Skip the refried beans. If you must do beans, add a little bit of black beans on top.

I do homemade nachos once a month, because all of my kids love them. We've tried all kinds of variations:

-Ground beef, chorizo, steak, chicken, carnitas, barbacoa
-over tortilla chips, or Doritos, or french fries
-with beans or with refried beans (gotta heat them first!)
-with shredded cheese or with queso

And then of course toppings for everyone to pick from- sour cream, guacamole, salsa, chili sauce, olives, jalapenos, lettuce, diced red onion, tomatoes, etc.

I think my favorite are slow-cooked carnitas over tortilla chips with shredded cheese all through it. Carnitas is so easy to make, too, and it's easier to shred in the mixer than it is to chop chicken breast or steak fine enough to make good nacho toppings. Or if I'm eating them out, I love Cafe Rio's chicken nachos. They are crazy good.

I tried that once. I felt disgusting. Never again, and by never again, I mean tonight.

Haggis nachos for my tea tonight and tomorrow because it's nearly Burns night and I've got haggis aplenty!

All of those sound good!

For something different you might want to give this Rotel recipe a shot. i use it for a dip but you can just put on chips instead.

1 roll Jimmy Dean sausage
1 can Rotel
2 packages cream cheese

Brown sausage. Add cream cheese, Rotel, and sauage into a crock pot. Mix. Once melted, enjoy.

bottom layer of refried beans with chips stuck in them and fanned out.
covered with ground beef, nacho cheese sauce and baked for 20 min
then add shredded cheese and whatever cold toppings

every chip will have beans, there are two types of cheese for contrasting texture and hot vs cold on the same dish for a refreshing contrast as well.
