Seriously, you could go broke getting all the great games on the system.. but I'll just give you one. Grandia is a great choice if you actually have a PS1, because it notoriously crashes PS2s.
 
if you could play import games then may I suggest Vib Ribbon. It's a rhythm/platformer in that the types of jumps/actions you need to make are determined by the music CD you put in the game. yes, it turns your CD collection into virtual levels.

Also, Raiden Project, if you haven't played them out. Really good versions of both Raiden I and II, far better than any other console port I know of.

Tempest X is also a cool, different shooter.

Platformers: Spyro the Dragon 1 and 2 are a bit easy, but *incredibly fun to play*. I think Spyro 1 may be my favortite 3D platformer (a genre that, admittedly, I do not love).

Not in your favorites, but Abe's Oddysee (and Exxodus) are great games, too.

Seriously. It's like, Panzer Dragoon's targeting/firing system meets Spider-Man's ability to climb on walls and ceilings. Plus it's free-roaming 3D, not on-rails a la Panzer Dragoon or Rez ...though it does have the invisible walls so prevelant of that era.

Pure beats it. But then again, I though that 3 beat it. I hate XL's forced rank order-per-lap.

The AI in XL is all fakey crap. Pure and 3 get it right, althogh 3 is a bit plain looking. 3 also has the Elimination mode, which is fun, and not in any other Wipeout.

Ogre Battle, but only if you never played the original SNES game, which didn't suffer from absurd slowdown.
Tactics Ogre.

I won't recommend Valkyrie Profile only because it's ludicrously expensive to find right now and has no replay value anyway due to extreme linearity and two to three dozen unskippable 15-30 minute cutscenes if you actually want to get all the characters.

Just off the top of my head :X There are a ton of great PSOne games, but the problem is wether or not they stand the test of time well enough to be playable. For example, I loved R4 when it came out, but it's really painful to go back to it now. 3-D graphics just don't age as well as 2-D.

I question some of these "great" games that have been mentioned (like, say, Tail Concerto). Good, yeah, but great? Not hardly.

I thought I really liked Klonoa until I realized it was slow, plodding, and boring. Go figure.
