Every generation it seems that there are a few games that just get delayed a million times, and sometimes don't even make the generation at all.

-Fable
-Starfox Adventures
-Psychonauts
-Perfect Dark 0
-Duke Nukem Forever
-BC
-Zelda (both of them)

And I'm sure there are some on the PS2 scene, but I haven't followed that until recently.

My point is that there are bound to be plenty of games that are promised in the first 6 months of a console's launch, but we know deep down that's not going to happen.

Which franchises, games, and/or developers do you fear this from the most?

Wind Waker was hardly "delayed a million times". I don't think it was delayed at all in Japan, in fact.

Games for next Gen systems?

Well, for starters keep Duke Nukem Forever on the list from last gen, just like it was on the list from the gen before that.

-Final Fantasy XIII (If we are lucky enough to get XII)

-Kingdom Hearts III

-FF Tactics

-Zelda (with Twilight Princess coming out late it will probably be awhile before you see the Rev version if there is one.)

-GTVision

-I have this strange feeling Halo 3 will be either delayed or if it does make it for PS3's launch it will be said to seem rushed. I think they should polish this bitch up and just let it shine but hey we will see.

-Mario128 - I think they are still in the "What the hell are we doing with it again?" stage despite all their talking about it.

No, but its delay had more of an impact on owners of the console than most games. The Zelda series in general has a tendency to miss first release periods. OoT for example.

with what hardcore gamers are demanding from the next generation games (better graphics, longer games, more story etc), I see nearly every 'deep' game to expect any or all of the following:

1) Higher prices
2) longer development times
3) Shorter games

Then again, I probably would've said the same thing about this generation.
