My guess is someone asked him. Hell, they're all down in Jaw-ja, and since she's a well known figure down there and there's new controversy, someone probably asked him to comment, and he felt obligated to be kind. Carter is a really good dude.

No disrespect, but just because you don't know who she is, doesn't mean that there are not millions of people who do and care about her (whether positively or negatively) in some way.
I am not a fan of Paula Deen (my mom was, before this came to light), but I do feel bad for her in a way. Still, I think what she said and the way she allegedly treated her black employees is wrong and unacceptable.
It seems that she has a glamorous view of the South during the 'slavery years'. It seems like she wishes she could have lived through that time. Slaves = like family, does not compute!

In this country if you're likeable, you can say the most damning thing and people will fight for you; it's ridiculous. Corporate America isn't touching her because she's too hot right now but once all this blows over she'll be right back to doing what she was doing. I also don't like how she went on The Today Show making up excuses, putting blame on other blacks for calling each other the N word which isn't the same N word she using. The N word with the -er is completely different. I hate how she had all these slavery fantasies/fetishes. To me that's real disturbing.
