The Chewie stuff is easily answered...

The only character he meets in Episode III is Yoda and he never sees Yoda in the OT.

If Sidious ordered Dooku to arrange an army, where would that put Darth Maul? (you say it took place before the battle of naboo) You cant have 2 aprentices right?

I don't believe there has ever been a to the month or year specific timeline on this. I would just assume it as Maul died, Sidious took Tyrannus, Tyrannus went to Kamino and ordered the clones

as for balance to the force, you seem to forget that the force isn't just in jedi's and sith. It in that tree, this rock, the air around us, and let's not forget all of the hutt's rancor's, dionaga's, and general all around jack asses in the galaxy. there is already plenty of force flowing through some bad stuff in the universe.. flowing through a sith as well puts it out of balance.

pretty simple, eh?

From what I remember on the Episode II DVD Commentary, Lucas comments that Maul was fully trained from beginning to end by Sidious, but then when he was killed by Obi-Wan, he didn't want to start all over from scratch, so he decided to just convert a Jedi and that man is Dooku. Also, Lucas wanted to show that a Jedi CAN be converted to the Dark Side, hence this happening to Anakin in Episode III. I figure if Maul were to have lived, he might have died anyway because there comes a point in a Sith's life when he wants COMPLETE control, as in Episode II Dooku tries to convert Obi-Wan to his side, so that they can take down Sidious...and in the Original Trilogy, Vader tries to get Luke to join him in Empire so that they can rule together. The Sith thing is always about taking complete control over everything, and the problem with being a Sith is that there isn't any trust, and if there is, it's not forever.

EDIT: There is a picture floating around with Anakin fighting Dooku in Episode III with Palps (Sidious) looking on and encouraging Anakin to kill Dooku (That's what it looks like because its similar to Jedi)This repeats in Episode VI with Luke, where Sidious tries to encourage Luke to kill Vader so he can take his place.

That's not with the force in balance. It's 'he will bring balance to the force', which he does when he kills the Emporer. Soon as he does that he's not evil, and dies, leaving Luke Skywalker as the only Jedi (though Leia seems to be force sensitive or something).

Hence, Balance = 1 Jedi, aka Luke.

The twins are not born until the end of the movie after Anakin Force chokes Padme. The twins never come in contact with any Wookiee, including Chewbacca. Peter Mayhew's comments were made up by a fan.

To add on to this. If you notice in A New Hope when they go into the cantina, Obiwan talks to Chewie then Chewie convences Han to talk to them. Obiwan is calling in an old favor to get Chewie to get Han to speak to them.

Except that it's absolutely confirmed by Pablo Hidalgo that Chewie does not meet Obi-Wan in Episode III.

I didn't know if Chewie meets Obiwan or not in the Ep3. Just putting out a theory.
