If you're talking about the episode where they presented that particular religious figure as a person in a bear costume, it was Comedy Central themselves who edited that episode. I also believe it was less out of "we have to respect this religion but not others" and more a matter of "we don't want to deal with death threats over this." The south park creators disagreed with the choice, and called it cowardly themselves.
