There are definitely orchestrated tracks in this game. The level with the army of tanks is orchestrated, the ice level with the shoe-skate is orchestrated, the castle level we've seen in videos is orchestrated.

Just like Galaxy 1 and 2, some songs aren't orchestrated, but many of them are.
