Don't think it's ever said. Presumably Shanks was planning on selling it. Devil Fruits are extremely valuable and fetch huge prices on the (black) market, after all.
There are books written on Devil Fruits and their abilities. When an ability user passes the fruit can exist in the world again. Some abilities are so strong other characters actively seek it. Sometimes they make good loot for pirates to sell as well.
Still trying to figure out why Toei did a 5 episode recap during this.

They are supposed to be quite rare and worth a lot of money, though if you notice, most are held either by powerful pirates or organizations.
I think they were really close to the manga at this point. I prefer this to the 1:1 pacing since at least you can skip it when you're binge watching.

Basically One Piece changed time/day in Japan so they made these recaps.
I still think DeMarco should be more liberal about knowing when to skip episodes.

Even more annoying is that a month long break happened alongside the recaps, making it an even longer wait.
With the month of movie's coming up, Toonami viewers get to experience the same pain we all shared back then!
It's because the timeslot changed from Saturday morning to a weekday night. They felt like they should catch up the new viewers.
We're not even close to the final battle of Enies Lobby.
Whatever. It's one giant arc that refuses to end.

It was easier to do filler here to help build a buffer before all the fights started than adding it later.
