I just purchased a TV WONDER PRO, and the included software licks balls. Looking for something I can connect my game systems to/ take pics/videos with.

I tried DSCALER, but it dosen't seem to like my card.. video output has totally wrong dimensions, it's very jumpy, and S-video only produces a black and white image.

Win-TV2000 dosen't work for me, it's missing a dll or some shit.

DScaler used to be the best Windows software around(but I'm not entirely up to date), I suggest you give it another spin, it doesn't get much better.
Regarding the SVideo output, sounds to me like you haven't configured the source and you're actually receiving a composite signal through a SVideo cable, hence the b/w image.

How would I go about that?

And what about the flickering?
