They all have soy sauce, but I do remember watching a woman make some eggplant with oyster sauce and soy sauce-- making a brown colored sauce.

I think what you're referring to may be BLACK BEAN SAUCE

It rocks. I usually get it with Beef/Rice Noodles. It's meant for beef mostly, but I've had it with clams before.

A dead giveaway is that there's beans in the sauce.
