Oh, boy, tough question. I would likely be the "smart guy" who dictates team strategy. I've read the Zombie Survival Guide so I suppose I'm halfway there already. Given a choice, I'd wield a spear, a crossbow (with bonus explosive bolts), and a crowbar for short-range kills. You won't catch me dead with any weapons that make noise in a plague-zone.
Now for my squad...
1. Vash the Stampede (TRIGUN) - Weapons Specialist
Vash, while being an all-around pleasant sort, is bristling with weaponry. Along with his iconic pistol, he's also armed with his ultra-powerful "Angel Arm", robotic arm machine gun, and retractable boot-knives. Vash doesn't miss a shot, and, despite being a pacifist, will have no issues killing the undead. An all-around great companion, despite the noise he'd inevitably make dispatching the undead.
2. Boone (FALLOUT: NEW VEGAS) - Sniper, Headshot-Master
As anyone who's played New Vegas knows, Boone is an extraordinary threat to anything with a head - namely, the shambling horde. Boone can headshot even the quickest Feral Ghouls with his scoped hunting rifle. Equipped with a silenced sniper rifle, he would be the ideal complement to any zombie-slaying party. Boone's secondary weapon is the machete, which has unlimited zombie-killing potential.
3. The Boss (MGS3: SNAKE EATER) - Stealth, CQC Specialist
Big Boss seems like the obvious choice, as he's bested The Boss is combat before, but I thought my party needed some femenine energy. The Boss is a weapons specialist on par with (or perhaps superior to) Big Boss, and thought him everything he knows about Close-Quarters-Combat (or CQC), making her invaluable if any undead manage to cross Boone or Vash's line of site. She can disable even the best living fighters at close range, so a shambling horde should present no issues.
