Any tips? There has to be something... I look at the newsreel on the fighters, I take into account wins/losses - although Jennifer is straight up the most powerful. But the computer just straight up cheats anyway so it all seems trivial.

Catfighting is 100% luck. The damage values are random, the button-mashing is definitely pre-decided and for a couple of the girls there's a chance you can lose even if you fucking win.
The cabaret is 100% inferior to real estate especially when you consider the level of involvement. Kiryu can go out and finish substories, make friends, hook up at telephone clubs, eat at restaurants, buy more real estate, and generally fill out the completion list while collecting money. Majima has to watch his shit like a hawk to collect peanuts. At least it's fun though.
I much prefer doing the cabaret to Kiyru's real estate. The real estate feels like a job I have to babysit constantly, like the weapon agents. Sure, the cabaret takes more time, but it's just much more well designed as a game, and better integrated into the rest of the game (i.e. finding new hostesses).
It's a bit frustrating to find a moment to work on the cabaret club though. I only did it twice in Ch. 7, and now I've started Ch. 8 and already there's more plot drama for Majima to attend to. I don't want to take away from that narrative tension by stopping in to do the cabaret or minigames, so Majima's chapters have felt a bit more on rails. It's a testament to the writing that I even feel that way, but I think the plot pacing of the game doesn't leave much room for fun so far.

The only time I've made decent money on the Catfighting Club, I looked for the woman with the highest payout (i.e. the worst odds). I lost a couple times, but kept betting on her. Then I won twice in a row and quit before the final round. Made about 2.5 mil on a 100k yen bet. Even though I lost a couple times, the end payout was so big I made massive profit.
Of course there's much easier ways to make money, but it can be done if you don't actually focus on "the best catfighter". Just find the most profitable one.
If I'm remembering this correctly the end boss of every Kiryu chapter is
Kuze. So then, you fight him something like five times? That may be a new record for reoccurring bosses in a single game lol. Fucking stubborn old man, take a hint.

Yakuza Kiwami seems like a less (side)content rich zero. Not sure how SEGA must market it. I think they should release that one cheaper and call it Yakuza anniversary edition/remake or something like that. And make the reviewers/fans clear what it is beforehand.
As for 6, from the looks of that, that one is going to be fresh due to the new engine and mechanics. And given the basic plot premise regarding Haruka, I think it is good that they do a rerelease of the first game.

If I do this, am I likely to not be able to do things in the story due to a lack of funds? Can I do all the substories after the main story at a later time?

I suppose the good part is that the bonuses for winning Majima's club battles is enough to purchase all the next area's properties and then some.
Real estate has more earning potential but if you do the pure minimum amount of work to complete each business, you will come out of cabaret with 10 billion+ and come out of real estate with little to show for it. But really the fact that real estate amounts to standing around while you wait for money to accumulate kills it. The time between investments is not long enough for it to be efficient to go do a lot of other stuff in between, but just long enough to wait it out, so the best solution is to let the game idle while you do other stuff and check in every 10 minutes. And in between starting it and finishing it you don't make any money off of it at all because you have to put it all back into the system, so you either don't engage with it at all or engage with it all the way, which amounts to putting your playthrough on hold for hours while you run around investing in businesses and going back to collect and let it idle some more.
That's bad design imo, it's arguably not even a game at all.

You can rush through the story without any problem, the only thing that could slow you down is a difficult boss. After you complete the main story, you will have access to Premium Adventure mode, where you can freely roam around Kamurocho/Sotenbori and complete any substory you didn't before

Slight tip, the stars for each move aren't their strength but the chance the character will use them so play to that as best you can so if the AI is:
Rock - four stars
Paper - three stars
Scissors - one star
Picking paper gives you the highest chance to either win against rock or draw against paper etc. The draws will screw you often as it seems fairly pre determined no matter how quickly you button mash so that's up in the air but play your odds best you can.
When an AI uses the comeback skill and is going to screw you I mashed X and moved the left analogue around and that seemed to prevent it happening with a counter, not sure if coincidence but worth noting.

I'm planning on playing it for like 20 hours this weekend (something I haven't done for years and years), so that's fine. It's just the time after the weekend and all the other games I want to play that are the problem.

Yeah, if you want to experience everything this game has to offer you need tons of time, easily 100+ hours. I'm around 50 hours in with 45% completed and even if I really want to do all the sidecontent, I think I'll go and rush the main story. I grabbed Nioh yesterday and Horizon is coming in 3 weeks!
I did the same and got crushed, try to level up your hostesses a bit (doing ~10 normal cabaret runs should be fine) and also let your best hostesses rest before you decide to take the cabaret battle
This game has been something an enigma for me. The game itself is something that is right up my alley. I love so many aspects of it including the over the top silliness mixed with real, raw drama. It's got a great localized script, it has a shenmue feel to it. The acting is great.
It's great despite some of its flaws like the lack of custom map markers, getting stuck on things while moving, animation feeling a bit stiff. Even the combat began to feel repetitive for me. Then there's the strange way the substories are done. Though there are some great ones that I've already done
like chasing after the thief who steals the videogame from the kid and the last person ends up being the kids own father trying to get it for the kid
, it may just be that being such a Japanese centric game, I'm not used to some of it. But more importantly, I began to get bored with it by the end of chapter 2. I felt like it was just moving too slow. I love games, I play as much as my time can afford so I think a lot of how I feel is due to the amount of games I have in my backlog and still looking ahead to.
So am I getting bored too easily because I'm looking ahead to play the next game like in this case Horizon Zero Dawn, TLoZ:BotW (not to mention still wanting to get RE7 and Gravity Rush 2) or am I just not really enjoying it as much as I think I should be? I'd like to bet on the former as I find myself, for a long time now, rushing through games or at least feeling the pressure of the next release that looks really good.

I did it when it first popped up and won by something like 4 Million. Had like 1600 fans or so at that point. You probably want to make sure that you got some decent girls from substories or the streets though and head out with a full roster of 8 girls in good condition. That's what I did.

It's replaced The Myth from Yakuza 4 as my favourite Kiryu's battle theme, absolutely amazing track! Kind of wished they saved a track like this for the finale of Yakuza 6, nothing embodies Yakuza music more than this for me

Not gonna argue that, the cabaret mini game is the funner one. Where else can I say that I spent a bunch of time dressing up a small army Japanese porn stars anyways? Lol
Majima's story starts getting really good after chapter 7 too, and it so happens club moon is gated until you get to 8. It really is kinda tough to just stop and hop into the mini game.

We'll have to disagree on this one. I finished pocket circuit, bowling, rush training, Bacchus training, dance battles (3 battles against ogita at a time lol), the rest of the telephone club calls and probably some other things that I'm not remembering. I bought all the CP upgrades and still had the time to finish plenty of things while finishing real estate.
You can wait till Kiwami comes out which is a remake of 1 this summer. You can jump into 4 if you want because each Yakuza game is its own complete story with only minor connections here and there. Plus Yakuza 4 comes with a recap of 1-3.
They are pretty independent of each other and the game always explains why x or y is relevant to the story even if you just started playing it as your first game.
What helps with 4 is that the three characters out of four you control are new protagonists to the series so it shouldn't be an issue narrative wise.
I think it just helps that Majima is naturally an awesome character. Even though Dead Souls isn't a good Yakuza spin off game, Majima totally made that game fun for me, his cutscenes, story and side stuff (along with his personality) had me cracking up constantly.
