Finished the game tonight. I honestly loved it from start to finish. Hardest bosses for me were BSB and EDotC. Oh yeah, and RtVS, fuck him.
Started my New Game+ and decided to take on the Cleric Beast before calling it a night, felt good to beat him first time, this time (that doesn't make sense, yo).

chalice dungeon bosses were the only ones that caused me any real issues

Coming in at 3 times beating the game I feel I can rate the story bosses reasonably well (no chalice bosses here, not enough experience):
Tier 1 (pushovers who need help to make boss fight more difficult)
Witch of Hemlock is easiest boss fight by far. You get free back stabs on her when you find her. The hardest part about this fight is avoiding her projectiles which if you get hit by she grabs you and slits your throat. The entire fight is about avoiding the mobs and locating the witch. It's an interesting boss mechanic, sort of like The End from MGS3 but skill wise it's not hard at all.
Celestial Emissary is another adds + boss fight. The boss fight itself is pretty much a joke, just a really big dude with slow ass attacks (not even that high of a range on his attacks unlike the actual beasts). The challenge is mostly clearing out the adds unlike the Witch, this one has harder to ignore add ons. Still one of the easiest boss fights in the game.
Micolash is similar, easy patterns and aside from attack (the spell) he doesn't do that much damage. I would rank this easier than Witch only if his one attack didn't one shot you. Once you figure out that you can dodge towards him to avoid that one attack it's a lot easier to beat him. This fight is also one of the fight that is most likely to glitch out and if it does glitch out it is BY FAR the easiest boss fight in the game because the one attack that he is locked into doing does minuscule damage.
Tier 2 (Tame beasts)
The Unborn One. Basically you just keep attacking its forearms and it will keep toppling over for big damage to the head. Unlike most of the other bosses, this boss has a very hard time turning around. The main challenge from this boss fight comes from its AOE toxic attacks which you need to avoid and the witches that shoot you from off screen which can be dealt by just attacking them head on.
Dark Beast Paarl is similar to the Unborn One in that he can only also be put into a stunlock pattern. Once you hit him enough he loses electricity, falls down and is open to a lot of damage. Then he will always try to retreat and bring his electricity up but even during this phase he is vulnerable and can be hit out of it. The hardest part is starting the pattern as his swipes have a large pattern but generally pretty standard compared to other boss fights. Large weapons crush him very easily.
Blood Starved Beast has first two phases which are pretty easy overall but the 3rd phase combined with the cheap 1 hit kill move makes him much harder than he should be. The poison AOE aura he has is super cheap and without antidotes/poison res gear it makes the fight a bit more challenging. His attacks are easy to avoid for the most part and he can be parried easily as well. It's really just the OHK move and the poison cloud that makes him tough... the rest is very manageable. In addition, he is one of the few bosses where you can summon an NPC so that makes him even easier.
Moon Beast despite being the true final boss fight of the game does not feel like one as the one before it is much harder. Basically has a triple swipe that you need to dodge along with a charging attack that hits for a lot. The real challenge for this fight is a very cheap full screen AOE attack that puts you at 1 pixel which is really hard to avoid. That's the only reason why I have this fight at this level... that and unlike Darkbeast and Unborn One you can't really stunlock him forever as he tends to retreat back to create space and then come in.
Tier 3 (bosses with gimmicks)
Mergo's Wet Nurse is another boss that is susceptible to getting bugged out. Even without bug it's not that difficult of a boss fight as long as you know you can run around to avoid her cloud/clone move. It's a very straightforward boss fight otherwise.
Shadow of Yarnham is a bit hard until you figure out the most optimum order to kill them in. Killing Mage first then the swordsman and then the fire breather is the best method that I have seen. Trying to kill the swordsman first will lead you to getting hit by off screen fireballs which is very cheap and if you get hit by fireball plus a sword that's pretty much death. The Mage in his transformed form has a very devastating snake summoning attack but luckily you can keep the offensive pressure up and not let him do the attack while he's in the midst of transforming.
Tier 4 (cheap large sized bosses with wide AOE swipes tier)
Cleric Beast is hard as far as first bosses in games go but overall not hard. The real difficulty in the boss fight is again the wide AOE swipes and the bad camera plus tight corridors. Unlike most boss fights this fight actually gets EASIER through the phases because each phase limits the Beast's vision so it's easier to space him out and have him whiff attacks with baits. Very vulnerable to Molotovs which makes him easy to cheese out and you can also summon an NPC against him (Albert if you fight Father G first).
Amilia Vicar is yet another large boss fight with AOE swipe attacks. She can also heal but you can nullify that with healing mist. The biggest problem with this fight is that her model obscures visions so much that it's very hard to tell what she is going to do. Most of the strategy just involves staying close and hitting from behind but again... you might get hit by stuff that is hard to see/dodge.
Amygdala can be a hard fight if you don't use any ranged weapons for the final phase. First phase is easy for the most part unless you are too close and get hit by her arcane explosion attacks. Her swipes are a bit tricky to dodge. In her final phase she rips off her arms and uses them as weapons which poses two problems: It greatly extends the range of her attacks and she presents less of her self as exposed to attacks (her torso/feet take no damage, only her arms and legs do). She also has a few OHK moves like the jump attack (hard to get out of if you are in a bad situation) and a bunch of large AOE attacks with her swipes.
Tier 5 (Rom tier)
Rom is a very, very annoying fight. The spiders hit much harder than they should and the rain of blue shards he throws at you is hard to dodge/run from. You have to be running to dodge it and then as soon as the meteors start falling you make a sharp turn to your left or right to beat the homing. From experience the most consistent way to beat him is to just kill the adds first one by one. It will take longer but it greatest lowers your chance of getting one shotted by a couple of spiders jumping from off screen.
Tier 6 (Hard but fair tier)
Father G is the game's first "skill tester" boss fight in the game. It's a skill tester because it checks if you can parry well or not. If you have trouble parrying them or you are bad with your spacing then this boss will keep wrecking your face. Once you think you have a handle on the boss fight, he will go through the most dramatic transformation out of any boss in the game... his final form is probably the most difficult phase in the entire game. Without the music box, without Molotovs the best way to beat him is with parries and if you miss you will be in a world of hurt.
Logarius is another fair yet reasonably difficult fight. He has a lot of moves to keep track of and if you are caught in a bad position he can punish you really hard. His attacks have wide range and he has decent speed for an old man. His first phase isn't hard at all the hardest thing about it is his red skull counter attack which can do massive damage if you over commit. His 2nd form can be parried although if you miss you get punished pretty hard because his attacks have an after image. The fight when it boils down to it isnt THAT hard but it's harder than most anything else in the game. Father G is technically harder than Logarius but stuff like Musical Box and Molotovs allows player to cheese him easier than Logarius.
Gerhman. Gerhman is the hardest boss fight in the game without being cheap. His first phase is not that hard, you can parry in between his combo strings but his 2nd phase is just on another level. You can't parry him and his damage is through the roof. He has big attacks that can one shot you, his range his high and his speed is high. Your dodging and spacing has to be on point in this boss fight. Worthy of being final boss material and a challenge I can enjoy.
Tier 7 (Cheap as fuck)
Ebrietas. Unbugged version is a cheap shit. The biggest swipes that hit multiple times because she has multiple arms. She has attacks that can hit behind her and her charge attacks have hit boxes all around (so you can get hit by them even if you are no where close to it). Her arcane lasers can one shot you, her blood spit can inflict full frenzy and her electric field passively damages you just for being close. Everything she does takes a huge chunk of your life. This boss fight is hard for all the wrong reasons.

Started to think about getting this but have a few questions.
How hard is the Game? I have no problem with dying in a game, as long as its fair ie I screwed up or tackling something I shouldn't, or learn the way to tackle enemies such as pick them off. But I primarily use games to relax would this be for me? (Usually play rpgs like ff, tales of, and cheesy horror like resident evil (played games for around 22 yesrs so consider myself "good" at rpgs etc but have limited time to play (damn work)

Game is above average in difficulty compared to games that are made these days.Started to think about getting this but have a few questions.

This game while being a RPG is more like an action game in the vein of NG than something like Dragon Age. You need learn attack patterns, dodge appropriately and use combat skill rather than stats/theory crafting to get through places.
The only time waste that the game has is because of the loading which adds up when you die a lot. If played well the game doesn't waste your time.
Game can be beaten in 20 hours on first walkthrough blind. If you play a few hours a day you can beat it in reasonable time.

Gestures question -- once you bring up the menu with left-touchpad.... I see the 'motion' gestures but can't get them to activate. Do i need to do something special or is my gyro gyacked?

I feel that I have to do all the Chalice Boss fights as well as many of them are on par with the story boss fights as well.
It has some good ones and some duds. Like overinflated normal enemies with a health bar smacked on, but I do really like the bottom Pthumerian one.
I was looking earlier out of curiosity at the trophies and I find it funny that this will always stay as my trophy screenshot.
Finally managed to kill Ebrietas (it was the boss I died most to) and of course she summoned the lasers thing right before she died. While I was enjoying the "prey slaughtered" message on the screen I obviously got killed by those. Even when I freakin killed her, she still got me somehow. I'll see you soon in NG+ Ebrietas.
Need help getting Eileen's gear. I met her in the sewer early on in the game. Now I'm late game. As in the next two bosses I face will be the last. I've looked for her as I backtracked through Yarhnam and Cathedral Ward but I haven't seen her since early in the game. Apparently I didn't complete her dialogue back then since I never got the emote. Would that make a difference?

I enjoyed the Pthumerian Descendant (two variants, right?), Watchdoge, Undead Giants (bit easy but whatever), Bloodletting and Abhorrent Beasts. Buffed normal enemies are trash, but I suppose they fit the challenge curve (I've never seen them past floor 1). The boomerang Pthumerian Descendant and Abhorrent Beast are two of the most straight-up "git gud" bosses in the game, along with Papa G and

Yeah there were two Descendant fights but I didn't like the bottom one because it is some goddamn bullshit that he can throw his sword through the pillars in the wall and hit you.
Abhorrent Beast is pretty damn good though, and Watchdog is fine. Didn't care for the giants and bloodletting that much, I also fought 'brainsucker' multiple times which was just the cthulu enemy, I know he was in the isz chalice and something else.

Brainsucker is a fucking hilarious boss. Also, I fought the boomerang Descendant twice, once in a large circular room and the second time in that narrow hallway with pillars. Getting hit by his projectile through objects sucks, but luckily it doesn't deal too much damage, and staying on him worked better for me anyway. He has some nasty strings to dodge, however. Felt satisfying as fuck when I got him. I liked Bloodletting because he can stay on you so easily. Makes it really tough to heal, but his attacks aren't as nasty as something like Abhorrent's.
I am finally getting into this game on the second session/day of playing. After having only played Demon's Souls for about 8-10 hours back in the day and quickly giving up on Dark Souls, this game is finally starting to click.
Right now I'm still a little early at the second boss. I went in blind and the first 5-7 hours of this game were brutal. I stopped and started this game so many times out of frustration while getting used to the game. I only kept playing due to my friends encouraging me on. You pretty much have to adapt yourself to play the game the way it wants you to play. It is so different from other action games that it has taken me a long time to recondition myself. There's a lot that I don't like about the game (camera, lock-on system, overall jankiness, etc.), however when you finally progress it is immensely satisfying.
I've unlocked all the shortcuts to the second boss so far and am starting to appreciate the level design.
First two bosses seem a little underwhelming so far, at least in terms of understanding them mechanically compared to dealing with all the rest of the game.
Will love to see how this game opens up further along.

I remember another variant that shot arrows and some other stuff. I liked that one more either way, because I could parry his ass to oblivion.

Boy, the chalice dungeons are ugly city. Especially Isz.

I've been able defeat every boss on my first or second try with little issue...But
is seriously pissing me off.

Is this the defiled one?
Watch for specific attacks to hit and play it really safe. The bite is the main one, specifically when he bites to the left as it leaves him open to get a hit on. His rapid flame breath attack is another good one. If you see him queue up the throw up lava attack, you have enough time to run up and charge up a move to smack him with.
Later on he starts following up the bite with a third and fourth attack but I never really figured out the tell and would just hit the fourth one. Also, watch like a hawk for the charge move.

Here's my run of it, even if it took forever. My biggest mistake later on was not reading properly on where my move was relative to his head and I kept whiffing for a few minutes, but if you get the timing down it's not too bad.
