Has anyone read Aftermath: Star Wars: Journey to Star Wars: The Force Awakens? Kinda want to check it out, heard it's the beginning to a couple novels

It's kind of hard to say, because some things are being reincorporated into the new canon and some things aren't. Everything is being done on a piece by piece basis.
The Jedi Order still seems to be pretty much the same in terms of structure, since it was around so much during the PT and TCW, although I don't recall there being any canonical usage yet of the term "Grandmaster" for Yoda. But the basics are all the same: raised as younglings, become padawans, get trained and become Knights, highest rank to move up to is Master. No attachments, no romantic relationships, one padawan at a time per master, etc. The individual stories of some Jedi have changed, like with Depa Bilabba, who instead of disappearing from the story by going into a coma like in Shatterpoint now ended up waking from her coma (except this time the coma was induced by loss in battle to Grievous) and went on to train Caleb Dume/Kanan Jarus before she was killed during Order 66.
How Luke's version of the Jedi is structured is totally unknown, but I doubt it would be similar to the NJO.
In general, the Lucasfilm Story Group seems to be leaving the "background elements" like planetary names and the cultures associated with them, corporations, weapon types, etc. as they are, unless Lucas himself directly changed them (like Ryloth no longer being tidally locked or Mandalore having a pacifist government), but the characters get changed around a lot. The stuff in the distant past will probably end up getting radically changed around though.
Around 4000 BBY, lightsaber crystals were used to indicate a Jedi's chosen class. Blue indicated a Jedi Guardian, a Jedi who used the Force on a more physical level. Green indicated a Jedi Consular, a Jedi who preferred to reflect on the mysteries of the Force and fight the dark side at its heart. Yellow indicated a Jedi Sentinel, a Jedi who honed their skills in a balance of combat and scholarly pursuits.

I know a lot of us were saying Rey should go with a yellow Crystal. I think it's funny that Sebtinal probably would be the best distinction for her given her knack for mechanics.

I liked it but didn't love it, and the writing style turns a lot of people off because it's in second person present tense. If you're looking for something linking RotJ and TFA, it only does so a little bit since one of the main characters is Temmin/Snap Wexley (Greg Grunberg) as a kid. It's really mostly focused with some of the...aftermath of the first few months after Endor.
For other post-RotJ materials, there's Lost Stars (which goes up through the Battle of Jakku but spends most of the book in the Dark Times [pre-ANH] and the OT) and the Shattered Empire comic, which takes place immediately post-Endor. Closer towards TFA, there's the Tales from a Galaxy Far, Far Away short story anthology, The Perfect Weapon e-book, and Before the Awakening (which is three novellas about Poe, Finn, and Rey collected in one book). There will be a book called New Republic: Bloodline by Claudia Grey, the author of Lost Stars, next year, which is a few years before TFA.

What I'm hoping for, or we atleast get hints in the upcoming expanded universe.I think it would be far too convenient for her to be Luke's kid. I feel like they want us to think she is, and tease us with the possibilities of it with things like the Skywalker saber calling to her. But I do like the idea of her just being a brand new lineage we aren't previously exposed to.

Absolutely. The next movie being so close makes it easier to ear, but it makes me wonder when that stuff will start to feature these characters. We don't even know of Ep VIII happens after a time skip yet.

Well, didn't the Sith die off with Darth Vader and Palpatine? I'd say he fulfilled the prophecy, it just took a while and a lot of dead Jedis.

They talk about balancing the force but then they also say that he was supposed to destroy the Sith. That might just be George Lucas post-OT, though.

Yeah that chosen one prophecy shit, along with the virgin birth, was really some anakin-as-jesus allegorical bullshit. The PTs are full of Christian imagery and obvious similarities.
I don't mind that stuff, I actually enjoyed passion of the Christ. But I don't want it in my scifi, that's not what I come to it for.
