The Original is just simply a far more interesting story. It's no Kino's Journey or GitS, but it's worth watching whether someone is into anime or not.

FMA Brotherhood is fantastic. One of the best manga to anime adaptations. Try it for a couple episodes to see if you can get in to it, and if not maybe try the manga?
The original was mostly decent but the ending and movie were complete nonsense. If that's what she wants you to watch just ignore her.

it's, like, an alt-history fantasy thing set in basically-Germany during the early 1900s. If you've ever been into any kind of of genre fiction it'll probably not be the hardest thing to get into. At least, not compared to if she were trying to shove something set in a japanese high school upon you.
I really need to watch brotherhood or read the rest of the manga someday. I loved the original anime adaptation.
If you think there's a different broad category of fiction that you'd be open to a different interpretation of more readily, then ask. If there's a scifi or mystery or whatever anime series that she's super-fond of, then she'll dig the effort to meet her halfway on the anime thing and shift her nerding-out over there. FMA is good stuff, though. give it a chance.

And it's a great thing. Being passionate about something is super attractive. It's not even a question of introverts vs. extroverts, wanting to take someone through a journey of creativity they're not into is great.
OP should be critical about it as much as possible internally, and tell her he'll give it a shot if it means getting to know her more. That's a lovely thing to say.

(Seriously, though, good luck! If you do want some quality gateway anime to see what the fuss is about, Ghost in the Shell and/or Stand Alone Complex, Cowboy Bebop, and Neon Genesis Evangelion are my three top picks.)

As others have suggested, ask her to watch it with you.
FMA's not super tropey when it comes to stereotypical anime things. Brotherhood is honestly "worse" on this front although I think it's the better show overall. But both are accessible series that are perfectly enjoyable even if they're the only anime you ever watch.

Just like try to watch it. Many people think Anime isn't for them and then watch something they like.
Give a try to the big three modern gateway Anime:
Fullmetal Alchemist (what you have here) probably brotherhood.
Attack on Titan (have gotten so many friends and family into anime with this)
And One Punch Man which was super popular with mainstream.

All this Brotherhood slander in her.......ick. Not sorry but I enjoyed Brotherhood much more than the original FMA, of course that's fully with the context that I'd watched the first series already so I didn't mind them speeding through the opening story beats in Brotherhood as it would've been insanity to repeat them exactly the same.
Original FMA had deeper themes but Brotherhood was much more enjoyable show for my Shonen anime tastes, better action, slightly lighter tone & a really great ending.
Irregardless of which series it is, check out the first few episodes of at least the original FMA.
