Can someone explain the +/- stat?

It's your team's scoring margin while you are on the court.

Pretty simple stat, if it's positive your team outscored the other while you were on the court, negative and your team was outscored.

It is a good stat, but can be skewed by differences in lineups, pace, minutes played, garbage time, etc. Especially in a single game, single game +/- is only really useful for mocking terrible performances.

Over the course of a season it is pretty accurate as to who has the most impact on a teams success. Adjusted +/- is better for comparisons typically though, as it removes some of the factors that skew per game +/- like who is playing with the starting lineup vs. backups, etc.
